Cupcakes just seem to be one of those things everyone loves! Really, how can you go wrong with a cupcake? According to my boys, the only thing better than a cupcake is a cupcake with sprinkles! So chocolate cupcakes with sprinkles it is – I hope you agree!
You guys know I am not opposed to using a cake mix to save time when baking. But today I wanted to make a homemade cupcake! That urge doesn’t hit too often so I went with it and I’m glad I did!

The chocolate ganache will dry for you no problem! I decided to photograph while they were still drying because sometimes it’s nice to see something other than regular frosting on a cupcake. Or maybe that’s just the blogger in me…not sure!

Hope you guys like chocolate ganache! Honestly, chocolate ganache is without a doubt one of my absolute favorites! If you don’t like ganache you can always use regular frosting.
The batter for these cupcakes is a little thicker batter than you may be used to, but that’s the way you want it. Don’t forget to put a little water in your empty muffin cups, it helps the cupcakes bake better. Please trust me on this!
The cupcakes will crack just a bit on top to let the hot air escape, that’s perfectly natural!
Dip the top of each cupcake into the ganache. Place on a wire rack to set. Whether you use sprinkles or not is up to you.
Simple Chocolate Ganache Cupcakes
1 cup (2 sticks) unsalted butter, softened
1 cup sugar
4 large eggs
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
4-6 tablespoons cocoa powder (4 tablespoons were used for these cupcakes)
1 teaspoon vanilla
1 (6 oz.) container vanilla or plain yogurt
2 tablespoons milk
Chocolate Ganache
2 cups (12 ounces) milk chocolate chips, or other good milk chocolate
1/2 cup heavy whipping cream
Directions:
1. Preheat oven to 350 degrees F. Line 18 muffin cups with paper liners.
2. In a large bowl combine all the cupcake ingredients and beat with an electric mixer until smooth and well combined, about 2 to 3 minutes. Batter will be thick. Spoon or scoop the batter into the cups. Bale for 20 minutes. Remove pans from oven and cool for 5 minutes. Remove cupcakes and cool on a wire rack.
3. Place chocolate chips and heavy cream in a small bowl. Heat in microwave until smooth and melted, stirring every 20 seconds. It should take about 1 minute total. Or, in a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Dip the top of each cupcake into ganache; place on wire rack to set, decorate with sprinkles if desired.
Store in an airtight container in the refrigerator. Let stand at room temperature before serving.
