Simple Chocolate Ganache Cupcakes


These Simple Chocolate Ganache Cupcakes are the perfect party dessert or fun sweet treat for any day of the week! These homemade cupcakes are always a crowd pleaser.

Cupcakes just seem to be one of those things everyone loves! Really, how can you go wrong with a cupcake? According to my boys, the only thing better than a cupcake is a cupcake with sprinkles! So chocolate cupcakes with sprinkles it is – I hope you agree!

You guys know I am not opposed to using a cake mix to save time when baking. But today I wanted to make a homemade cupcake! That urge doesn’t hit too often so I went with it and I’m glad I did! :)

There’s nothing like the taste of a homemade chocolate cupcake! So incredible yummy!

The chocolate ganache will dry for you no problem! I decided to photograph while they were still drying because sometimes it’s nice to see something other than regular frosting on a cupcake. Or maybe that’s just the blogger in me…not sure! :)

Hope you guys like chocolate ganache! Honestly, chocolate ganache is without a doubt one of my absolute favorites! If you don’t like ganache you can always use regular frosting.


The batter for these cupcakes is a little thicker batter than you may be used to, but that’s the way you want it. Don’t forget to put a little water in your empty muffin cups, it helps the cupcakes bake better. Please trust me on this!


The cupcakes will crack just a bit on top to let the hot air escape, that’s perfectly natural!


Dip the top of each cupcake into the ganache. Place on a wire rack to set. Whether you use sprinkles or not is up to you. :)



Simple Chocolate Ganache Cupcakes

Ingredients:                                             2015-06-03-5809 Simple Chocolate Ganache Cupcakes

1 cup (2 sticks) unsalted butter, softened

1 cup sugar

4 large eggs

2 cups all-purpose flour

3 teaspoons baking powder

1/2 teaspoon salt

4-6 tablespoons cocoa powder (4 tablespoons were used for these cupcakes)

1 teaspoon vanilla

1 (6 oz.) container vanilla or plain yogurt

2 tablespoons milk

Chocolate Ganache

2 cups (12 ounces) milk chocolate chips, or other good milk chocolate

1/2 cup heavy whipping cream


1. Preheat oven to 350 degrees F. Line 18 muffin cups with paper liners.

2. In a large bowl combine all the cupcake ingredients and beat with an electric mixer until smooth and well combined, about 2 to 3 minutes. Batter will be thick. Spoon or scoop the batter into the cups. Bale for 20 minutes. Remove pans from oven and cool for 5 minutes. Remove cupcakes and cool on a wire rack.

3. Place chocolate chips and heavy cream in a small bowl. Heat in microwave until smooth and melted, stirring every 20 seconds. It should take about 1 minute total. Or, in a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Dip the top of each cupcake into ganache; place on wire rack to set, decorate with sprinkles if desired.

Store in an airtight container in the refrigerator. Let stand at room temperature before serving.

I love making personalized Care Packages for people! What do I mean by personalized? I mean a well-thought out gift for that particular person! When I put together a personalized Care Package there are a few things I try to do with each one. Basically, I try to make sure that each and every item in the “Care Package” or the package itself can either be eaten or used again. No waste!!

So what makes a care package personalized? Taking the time to really think about what that particular person needs and/or likes. If you don’t know, that’s fine too, simply opt for items that are both male and female friendly.

We recently had a neighbor boy move away for college. He is much more than just a neighbor. He was our go-to guy when we went out of town and needed someone to collect the mail, mow the grass or shovel the snow. Plus he’s just an all-around great kid!

Any-Night Double Chocolate (Marshmallow) Cookies

I think it’s obvious I like making different variations of cookies. I’ve done a few cookies now, and I have plans to make many, many more.

Maybe you remember, maybe you don’t, but when I mentioned that I make a lot of different cookies, I meant I make A LOT of different cookies!

Yes, this cookie starts with a mix and some people are just anti-mix kind of people, they consider it cheating. While some people consider mixes a great time-saver. Always remember, you can make your dough from scratch whenever you want to and add the mix-ins from there if you prefer.

Tonight, I just wanted to give my family a yummy & satisfying cooking for desset after dinner. After all, as my son reminded me, it has been forever since I’ve made cookies. Which means it has been about 3 or 4 days. :)


 Your chocolate dough with mini-chocolate chips and micro Jet-Puffed Marshmallow Bits added. Neither one is a must have, I just knew my boys would like both.


I happened to have these sprinkles on hand also. Aren’t they cute? They were leftover from something else, and I thought they would be prefect for these cookies. You really don’t need to go out and buy them just for these cookies; your cookies will be great with or without sprinkles.

Winter is far from over here, so the snowflakes are perfect!


Just have to be patient and let them cool…


All these cookies need now is a glass of milk like the one you see here.

Any-Night Dobule Chocolate (Marshmallow) Cookies


1 box chocolate cake mix (I used Duncan Hines – Devil’s Food)

2 large eggs

1/4 cup oil

1/4 cup butter softened

1/2 cup mini chocolate chips

1/2 cup Marshmallow Bits

Sprinkles, if desired


1. Preheat oven to 350 degrees F. Line baking sheet with silpat liner or parchment paper.

2. Mix the butter, oil and eggs in a large bowl with an electric mixer set on medium speed until weel blended. Mix in the chocolate cake mix and blend well. If dough is too dry add 1 Tablespoon of water. Fold in chocolate chips, marshmallow bits, or other add-ins by hand. Chill in refrigerator for about 10-15 minutes.

3. Roll the dough into 1-inch balls, roll in sprinkles, if desired, then place 2 inches apart on prepared cookie sheets.

4. Bake for 8 to 10 minutes. Cool 5 minutes on sheets, then remove cookies with spatula to wire racks to cool completely.

November – Let the Blogging Begin!


Every year November rolls around and I realize yet again, I’m not a fan of November. I’m not sure why I dislike November so much, but I do!

So, I decided to set a positive goal for myself this November. :)

Of course I can never just start out small like most people do. So one night, I told my husband about my newest idea.  I would like to try and put up a new post about Food & Lifestyle at Megamommy almost every day.

My husband calls it, the blog where I’ve changed my mind a million times about what I want to do and say.  Let’s just say he does have a point and leave it at that!

However, I must say the one thing I keep coming back to with all my ideas is the idea of simplicity. I will try my hardest to put up a new blog post most days for the next 365 days.

Doesn’t sound like much of a challenge you say?  This is a HUGE challenge for me! Please let me explain why.

  • Although I’m a positive person starting something like this in November (my least favorite month of the year) is a challenge in and of itself, but I will make it happen. This blog is going to be a great experience and I can’t wait to talk to all of you!
  • Secondly, committing to anything for 365 days in a row (or most days that is) is mind-boggling for me! But it can be done.  I think the key is writing about a topic a person ejoys. I know I’m going to enjoy this and I hope you will find the blog helpful is some way for your own daily life.

So why is the blog called Megamommy? Because I truly believe we’re ALL about more than just one thing! Life is very busy these days and very demanding. Personally, I think we’re all kind of Megas…

My biggest hope is that I can make life just a little easier for anyone out there that reads my blog. :)

I truly hope you will stop by often on this journey. 

I can’t wait to talk with all  of you!
