Salted Caramel Peanut Butter Sandwich Cookies

If you love peanut butter you are going to love these little sandwich cookies with a twist. On a hot day, try peanut butter ice cream between the cookies…so delicious!

My Salted Caramel Peanut Butter Sandwich Cookies are a fun little twist on regular peanut butter cookies. For these cute little sandwiches I used salted caramel peanut butter, but you could use any kind of peanut butter you want to.

About six months ago I saw other bloggers talking about Skippy salted caramel peanut butter, but I couldn’t find it anywhere. Here in Minnesota it takes a while to get products that the rest of the country has already seen. It’s so true! 🙂

Now this stuff is available just about anywhere they sell peanut butter. It’s a fun change of pace to have another peanut butter to experiment with. But I will tell you this, the salted caramel flavor is very, very light.

I like to use my mini cookie scoop for these. It keeps the size consistent and that’s a very good thing with baking.

Making my little sandwiches here. If you want the cookies flatter like mine press them down a little before baking with the palm of your hand.

If you prefer your cookies more dome shaped, just let them be. Don’t press them down.

Ahh, that creamy peanut butter filling is so good. I like to press my cookies together enough to get a little bit oozing out the sides.

Be careful, don’t press so hard that it all comes out. 🙂

Salted Caramel Peanut Butter Sandwich Cookies

Ingredients:                                                                                                      2015-08-22-6887

1 cup light brown sugar

3/4 cup salted caramel peanut butter

1/2 cup butter, softened

1 teaspoon vanilla

1 large egg

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 cup miniature chocolate chips

Peanut Butter Filling:

3 cups powdered sugar (confectioners’ sugar)

1/2 cup salted caramel peanut butter

1 teaspoon vanilla extract

5 to 6 tablespoons milk

Directions:

1. Beat brown sugar, peanut butter, butter, egg and vanilla until fluffy. Beat in flour and baking soda on low speed. Stir in miniature chocolate chips by hand.

2. Shape or scoop dough into small balls. Place 2 inches apart on ungreased cookie sheets or cookie sheets lined with baking mats. With palm of hand gently press down center of each cookie ball just a bit.

3. Bake at 350 for 8-10 minutes, or until set. Cool on wire racks.

4. For the peanut butter filling, beat the peanut butter, powdered sugar, vanilla and enough milk to achieve desired consistency for spreading. Spread on one half of the cookies and top each with another cookie.

Makes 20-22 cookie sandwiches
