I have made these bars probably hundreds of times. Until now, I have always made them in a 13 X 9-inch pan, and they have turned out great every time! 🙂
This time I thought I would try baking them skillet style. There’s just something about bars or cookies done skillet style that this family just seems to love. I’m not sure why, we just do…
So here you can see that the mixture is very thick. Don’t worry it’s suppose to be.
Press half the mixture into a non-stick skillet coated with cooking spray (it makes clean up very easy), or you can use a regular 13 X 9-inch baking pan. As I mentioned, this mixture is very thick and sticky, so I usually butter my fingers and gently press it into place.
See how it’s baked just until set? That’s exactly what you want.

Sorry guys, I missed the picture with the tablespoons of the mixture added to the top. It’s very easy, it’s just spoonfuls of the mixture placed on top, one at a time.
This picture shows you how the whole thing looked when it came out of the oven – warm, gooey and yummy. I know it looks a bit like a cobbler or such, but I guarantee you it’s nothing like cobbler, nor is it supposed to be.
Rolo Skillet Bars
Instructions
1 package yellow cake mix, regular size
1 can (5 ounces) evaporated milk
1/4 cup butter, melted
1 bag (8 ounces) Rolo minis or, 36 Rolo candies, halved
Directions
1. In a large bowl, beat the cake mix, milk and butter until blended (batter will be thick and sticky). You can certainly add 1/2 cup of chopped nuts if you want to but I never do.
2. Press half of mixture into non-stick skillet coated with cooking spray (it makes clean up very easy), or you can use a regular 13 X 9-inch baking pan. As I mentioned, this mixture is very thick and sticky, so I usually butter my fingers and gently press it into place. Bake at 350 degrees for 10-12 minutes or until set.
3. Place the Rolo minis evenly over crust, around the pan. There’s no need to cut the Rolo’s in half, because they are the minis. If you decide to use regular size Rolo’s be sure to cut them in half before placing on top of the mixture, cut side down. Drop remaining batter by tablespoonfuls over the top.
4. If you are using skillet method bake 20-25 minutes longer or until golden brown. For a 13 X 9-inch pan bake 25-30 minutes longer or until golden brown. Cool on a wire rack. Cut into wedges, or bars.
Servings: 8-12 slices/wedges; when I do any skillet cookie I usually cut it into 8-12 slices, depending on what we had for dinner and how many people I’m serving. It’s up to you, it’s your dessert. 🙂
