Pumpkin Chocolate Chip Banana Mini Muffins

October 19, 2015 · by Mega ·

These Pumpkin Chocolate Chip Banana Mini Muffins have all of your favorite flavors in one little mini muffin!

2015-10-18-7437

Fall baking is always wonderful! If you haven’t played with banana and pumpkin together yet, they pair quite wonderfully! Or in other words…YUM!

These mini muffins are a great way for the kids, or anyone to start the day. Simply add a cup of yogurt, and a glass of milk or juice and you’re set.

Because these muffins are made-from-scratch they have a wonderful not too sweet flavor. Not only do they have a wonderful flavor, the bananas and pumpkin are such a great way to start the day.

These Pumpkin Chocolate Chip Banana Mini Muffins also freeze well. So if you don’t need/want so many mini muffins at once, keep half and freeze half.

Enjoy my friends!

Spiced Pumpkin Cake Cookies

September 21, 2015 · by Mega ·

These Spiced Pumpkin Cake Cookies make a quick dessert or after school snack. They’re full of cinnamon, pumpkin and spice flavor…perfect for Fall! 2015-09-20-7166 This cookie is a wonderful cookie for Fall! It’s easy to make and it has some of the best Fall flavors. The thing I like most about this cookie is it doesn’t taste like your average cake mix cookie, this cookie is SO much better!

I decided to combine spice cake mix and pumpkin cake mix to make the dough along with a few other ingredients and I couldn’t have been happier!

Of course the real test was when I sent some cookies to school with my kids and their containers came back almost empty. Why almost empty? They decided they wanted to keep some for themselves, so they did. Too funny. 🙂

Let’s walk through how to make my Spiced Pumpkin Cake Cookies.

Baked Donuts are one of my absolute favorite treats to make! There are so many WONDERFUL flavors that a person can come up with, it just makes it so much fun every time!

I will be completely honest with you guys. Sometimes I make the mix from scratch and sometimes I don’t. You can get a very, very good donut using a cake mix! It all depends on what you add to the mix.

Then of course there’s the frosting. I am not much of a frosting person, but I love this homemade frosting! It is SO incredible wonderful! My guys couldn’t get enough!

Pumpkin Spice Brownie Pops

October 20, 2014 · by Mega ·

These Pumpkin Spice Brownie Pops have just become a new favorite in our house! Pumpkin spice, chocolate fudge brownie and milk chocolate make for a wonderful Fall inspired treat!

2014-10-16_3348 Pumpkin Spice Brownie Pops

My Pumpkin Spice Brownie Pops are a fun twist on both brownies and pumpkin spice. These brownie pops are delicious chocolate fudge brownies that are moist and tender and basically enrobed in a wonderful milk chocolate and finished off with a nice touch of pumpkin spice.

What does a nice touch of pumpkin spice mean? So glad you asked. 🙂

So let’s take it from the top, using pumpkin spice creamer in place of water in the brownie batter creates that perfect hint of wonderful pumpkin spice along with the chocolate fudge flavor. A few simple steps later the brownie pops are dipped in a wonderful milk chocolate coating.

Then there’s another accent of pumpkin spice added to the top of each brownie pop. Yes, it really does taste like pumpkin spice! Then I like to top off my Pumpkin Spice Brownie Pops with some fun sprinkles perfect for the season!

Enjoy, my fellow brownie and pumpkin spice lovers!

Can a chocolate chip cookie be made any better? For pumpkin friends, the answer is a yes and is as simple as browning some butter and stirring some pumpkin pudding mix into the dough. So yummy!

Although my post just the other day was also for a pumpkin cookie, this pumpkin cookie is a whole DIFFERENT kind of pumpkin cookie!

If you have never used brown butter in your baking, I strongly urge you to do so! The almost nutty flavor that comes from brown butter is SO delightful and SO scrumptious!

Of course there’s also the instant pumpkin pudding mix that imparts a wonderful, yet sort-of subtle pumpkin flavor. I know not everyone loves a heavy pumpkin flavor. Please try these cookies, I think you will be pleasantly surprised.

So, back to what I said, this pumpkin cookie is a whole different kind of pumpkin cookie, and I truly hope you enjoy it!

Pumpkin Caramel Chocolate Chip Cookies

September 29, 2014 · by Mega ·

My Pumpkin Caramel Chocolate Chip Cookies are a wonderful cookie for Fall!

2014_09_28_309 Pumpkin Caramel Chocolate Chip Cookies

My cookies today are a little fun and a little different. These cookies are super soft and almost pillowy. I admit I don’t do a lot of super soft cookies, but sometimes it’s fun to change things up a bit and that’s what we’re doing today.

The pumpkin in these cookies gives them a special softness, and of course a delicious flavor! Did I mention these wonderfully soft pumpkin cookies also have caramel and chocolate chips in them? Well they do!

You guys, these cookies are SO good when they’ve cooled just a bit and the caramel and chocolate chips are still warm and gooey!!

Let’s just say yummy is an understatement! 🙂

2014_09_28_330

You can see the cookies are speckled with chocolate chips and caramel bits. The caramel melts right in and you have a great combo.

If you would like to add more of either to your cookies certainly feel free.

Pumpkin Chocolate Chip Slow Cooker Cake

January 17, 2014 · by Mega ·

This delectable slow cooker cake is moist, warm and wonderful with just the right amount of chocolate chips and cinnamon. The flavors are amazing!

pumpkin chocolate chip slow-cooker cake_170

When the weather gets cold this is the perfect cake to make!

The texture of this cake is soft and moist, as you would expect with a slow cooker. Personally, I love this cake with a generous dollop of whipped cream, kind of melted in.

Of course my boys love the cake with a not so small scoop of vanilla ice cream. It’s all good – no matter how you like it!

I realize some parts of the country aren’t experiencing any cold weather, and that’s fine. But, I think no matter where you are this cake is pretty darn pleasing.

Please give this Pumpkin Chocolate Chip Slow Cooker Cake a try, I think you will like it!
