I am absolutely thrilled to bring you this incredibly delicious pie dinner that has ham, bacon and potatoes! NOM! Basically, I have put together my favorite part of several pie/torte recipes and combined them into one pie, just the way I want it. The result – a dinner pie that’s really, really good!

Whether you want to call this a Ham-Bacon-Potato Pie or a Ham-Bacon-Potato Torte is completely up to you. To keep things simple I’m calling it a dinner pie.

I can honestly say this pie makes me look forward to having leftover ham!

The preparation of this pie does involve a few more steps, but don’t let it Intimidate you! Because when your assembly is done you just pop it in the oven and let it bake. Out comes a golden brown pie full of bacon, ham and potatoes, with lots of flavor and little bit of creamy wonderfulness!

St. Patrick’s Day is just a few days away so I wanted to give you guys a simple yet tasty dessert you can make for the occasion, if you want to. It seems like there are a lot of people out there who really go all out for St. Patrick’s Day. So here you go!

Why is this Lucky Mint Chocolate Pie? Because once people taste it you will be lucky to get a piece! People of all ages love this pie!

The flavors and ingredients are so simple and yet so incredibly scrumptious together you will be amazed.

So here you have my Lucky Mint Chocolate Chip Pie that is wonderful for any occasion! Happy St. Patrick’s Day!

Love that the pie has a wonderful and delicious chocolate base. You can keep it in the freezer (the way I like it), or you can keep it in the fridge. Don’t worry, this pie does not freeze rock hard because it has a chocolate cream base.

In case you’re not sure, the chopped cookies are Girl Scout Thin Mints. Sorry I don’t have a box for you. I was lucky to get my hands on any, the boys went through them so fast!!

If you can’t find these marshmallows, no big deal. Regular marshmallows will work just fine. These marshmallows are fun when they’re half price, like mine were.

Seriously they have a faint chocolate mint flavor so you’re not really missing out on anything. You will still be getting the mint chocolate flavor from the Thin Mint Cookies and the Andes crème de menthe baking pieces.

There’s a lot of flexibility with this pie! It makes things SO easy! You don’t need to drag a fork through the whip cream, unless you want to. I did it strictly to give the appearance of texture. Either way the pie is going to be delicious. :)

Then of course you finish off the pie with chopped Thin Mint cookies (or Cool Mint Oreos) and the rest of the chopped Andes mint baking chips. The combination of the two is minty and chocolaty and so very WONDERFUL without being too much!

Lucky Mint Chocolate Pie

Ingredients:                                                                                              2015-03-14-4931

1/2 cup whole milk, or any other milk

24 chocolate mint marshmallows, or regular marshmallows

1 cup Andes crème de menthe baking chips, divided

8 Thin Mint Girl Scout Cookies or Cool Mint Oreos, chopped

1 – 8 ounce container frozen whipped topping. thawed and divided

9 – inch pie crust, baked

Directions:

1. Heat milk and marshmallows on LOW, or in a double boiler until marshmallows melt; stir in Andes baking chips until melted completely.

2. Remove from heat; cool. Add one cup whipped topping; stir and pour into baked pie crust.

3. Refrigerate overnight to set. Spread with remaining whipped topping, sprinkle top with remaining 1/4 cup of Andes and chopped thin mint cookies. Slice, serve and ENJOY!

Makes 8 servings.

Fresh and warm these Apple Pie Crescent Bundles are absolutely wonderful! Today, I am showing you how I make this simple finger food dessert and from there you can decide how fancy you want to get.

The nice thing about these little bundles is that they’re so easy to do on short notice! Not only that, who doesn’t love a little bundle of something yummy wrapped up nice and neat, served in the middle of a warm crescent? Seriously!

These little bundles are a wonderful finger food for parties! Or at home you can serve them warm with a nice bowl of ice cream, or my favorite way with some wonderful dipping sauce.

Ready to make some Apple Pie Crescent Bundles?    2014-11-13_3664 Don’t let the tiny spots on the apples fool you! These apples are all-natural and wonderful! FYI – often times when apples are grown without pesticides or sprays they may have spots, there’s nothing wrong with that.

As I so often do, I chose to leave the peel on because we like them that way. Feel free to peel them if you want to. :) 2014-11-13_3683 When you take these out of the oven, please give them a couple of minutes to cool! The cinnamon sugar mixture inside gets very hot so please let them cool a bit first!  2014-11-13_3685 As you can see, I’m a big fan of the drizzle. Love the drizzle!

This is how I generally serve my Apple Pie Crescent Pie Bundles when we’re at the table and have them for dessert.

2 apples cored and sliced

2 cans (8 oz.) each refrigerated crescent rolls

2 tablespoons melted butter

3 tablespoons sugar

1 tablespoon cinnamon

1 teaspoon nutmeg

1/2 teaspoon allspice

White Sparkling Sugar, if desired

Dipping Sauce:

1 cup powdered sugar

1-2 tablespoons Cinnamon Cream Natural Bliss Creamer, or milk

1 teaspoon vanilla

Directions:

1. Heat oven to 375 degrees F.

2. Separate each can of dough into 8 triangles. Spread each dough triangle with melted butter, sprinkle with sugar mixture, and top with an apple slice. Roll up apple slice in the dough forming a crescent or bundle. Brush top with melted butter and sprinkle with a bit more of cinnamon sugar mixture, white sparkling sugar, or both.

3. Bake 12 to 15 minutes or until golden brown. Allow to cool a bit serve warm, but not hot.

4. Serve on a platter as finger food, serve with ice cream, or serve with dipping sauce.

Makes 16 Apple Pie Crescent Bundles.

Frosted Cookie Cake Pie is one of those things we’ve probably all thought about trying at one time or another. Or maybe something along this line anyway.

I have been thinking about it for a while, so it seemed like time to make my own version, and I’m glad I did the kids absolutely LOVED it!

If you are not familiar, Cookie Cake Pie is just as wonderful as it sounds! I went with more of a Halloween look and feel, being that it is that time of year! So, for my Frosted Cookie Cake Pie you start with a frozen deep dish pie crust, add your favorite chocolate chip cookie dough, then pour in bright orange cake batter (for Halloween of course) and bake! Let it cool completely, frost and add all the fun Halloween sprinkles you want to!

Keep in mind you can make your Frosted Cookie Cake Pie as simple or elaborate as you want to.

Fall flavors really are some of the very best flavors – I love fall baking!

Today I bring you my Single-Serving Apple Pie Bowls. These little bowls are similar to a dessert I did last Fall called Apple (Pie) Flower Bowls. The concept is the same, just done with a fun little twist.

I felt like changing things up a bit today, so I came up with my Single-Serving Apple Pie Bowls. The flavors going on in these little delights are wonderful!

The idea behind these bowls is that you have a personal dessert for each person that isn’t too large, without having a lot of extra dessert hanging around the house.

My Singe-Serving Apple Pie Bowls aren’t exactly pie, and they definitely are not a traditional recipe. Simply put, they’re a great dessert with a wonderful golden brown crust.

Why a crust? Because you just gotta have a golden brown crust! :)

That wonderful deep dark brown color comes from the addition of the toffee chips. They add sort of a warm caramel flavored something special without being too much.
