This cookie is one of everyone’s favorite cookies with a new flavor twist. When you’re in the mood for something just a little different, try these cookies they’re wonderful.

We love cookie days here at Megamommy! For those of you who don’t know, we love the cookies around here! This flavor combo is something that just kind of came to me when I opened the cupboard one day.

The week before Target had PayDay candy bars on sale so I picked up a bag knowing I was going to use them very soon, and so I did. :)

I absolutely love the way the caramel from the inside of the PayDay candy bar oozes out here & there. So much fun and so yummy!

You want to chop up the PayDay candy bars into smaller pieces, but not tiny. The chunks in the cookies here and there are wonderful. Keep in mind they bake down quite a bit.

You want to be sure to let the cookies cool for at least 5 minutes on the cookie sheet. This is very important. Then finish cooling your cookies completely on a baking rack.

Not everyone likes or wants a strong pumpkin flavor in their food and I understand that. As a matter of fact, one of my guys isn’t always so big on pumpkin. The point is we all like different things and that’s fine.

These brownie cupcakes are SO GOOD! The first flavor to hit your taste buds is the flavor of a Reese’s peanut butter pumpkin (pumpkin in shape only), then you taste brownie, then you taste just a hint of pumpkin spice!

My Salted Caramel Peanut Butter Sandwich Cookies are a fun little twist on regular peanut butter cookies. For these cute little sandwiches I used salted caramel peanut butter, but you could use any kind of peanut butter you want to.

About six months ago I saw other bloggers talking about Skippy salted caramel peanut butter, but I couldn’t find it anywhere. Here in Minnesota it takes a while to get products that the rest of the country has already seen. It’s so true! :)

Now this stuff is available just about anywhere they sell peanut butter. It’s a fun change of pace to have another peanut butter to experiment with. But I will tell you this, the salted caramel flavor is very, very light.

Hope you give these cookies a try, they’re a fun alternative. Enjoy!

I like to use my mini cookie scoop for these. It keeps the size consistent and that’s a very good thing with baking.

Making my little sandwiches here. If you want the cookies flatter like mine press them down a little before baking with the palm of your hand.

If you prefer your cookies more dome shaped, just let them be. Don’t press them down.

Ahh, that creamy peanut butter filling is so good. I like to press my cookies together enough to get a little bit oozing out the sides.

Be careful, don’t press so hard that it all comes out. :)

Salted Caramel Peanut Butter Sandwich Cookies

Ingredients:                                                                                                      2015-08-22-6887

1 cup light brown sugar

3/4 cup salted caramel peanut butter

1/2 cup butter, softened

1 teaspoon vanilla

1 large egg

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 cup miniature chocolate chips

Peanut Butter Filling:

3 cups powdered sugar (confectioners’ sugar)

1/2 cup salted caramel peanut butter

1 teaspoon vanilla extract

5 to 6 tablespoons milk

Directions:

1. Beat brown sugar, peanut butter, butter, egg and vanilla until fluffy. Beat in flour and baking soda on low speed. Stir in miniature chocolate chips by hand.

2. Shape or scoop dough into small balls. Place 2 inches apart on ungreased cookie sheets or cookie sheets lined with baking mats. With palm of hand gently press down center of each cookie ball just a bit.

3. Bake at 350 for 8-10 minutes, or until set. Cool on wire racks.

4. For the peanut butter filling, beat the peanut butter, powdered sugar, vanilla and enough milk to achieve desired consistency for spreading. Spread on one half of the cookies and top each with another cookie.

Makes 20-22 cookie sandwiches

Peanut Butter Chocolate Chip  Zucchini Bread

Ingredients:                   2015-08-10-6731

1 stick unsalted butter, softened

1/2 cup granulated sugar

1/2 cup whole milk

1 large egg

1 teaspoon pure vanilla extract

1/2 cup creamy peanut butter

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon kosher salt, or sea salt

1 1/2 cups shredded zucchini

1/2 cup miniature chocolate chips (reserve 2 tablespoons)

Directions:

1. Preheat oven to 350 degrees F. Spray 3-4 foil mini loaf pans with cooking spray.

2. Place butter and sugar into a large bowl, cream until well combined. Mix in milk, egg, vanilla and peanut butter until just combined. Slowly add flour, baking soda, baking powder, salt. Add mini chocolate chips and zucchini, stir until just combined.

3. Fill mini loaf pans with batter 3/4 full. Sprinkle with remaining 2 tablespoons of chocolate chips. Bake for 37-40 minutes, until baked through. Remove and let cool on wire rack.

Makes 3-4 Mini Loaves

The end of school was really getting to be a grind, so I decided to put a smile on everyone’s face and make these Peanut Butter Cup Rice Krispie Treats. School just ended around here. :)

So let’s discuss – marshmallow, butter, krispie cereal, peanut butter, chopped candy, chocolate and of course sprinkles! All I can say is – count me in! You don’t have to ask me twice.

As for the boys, they couldn’t eat these treats fast enough, and thenthey had to divvy up the leftovers to share with their friends! So funny!

If you haven’t tried a good over-the-top rice krispie treat before, you have got to try these!

Don’t worry about having egg shaped candy! I used candy eggs I had in the freezer only because I got them for next to nothing after Easter. Regular peanut butter cups or fun size candy bars will work just fine!

Of course these treats needed a milk chocolate topping and confetti sprinkles on top! Don’t all treats?

Why confetti sprinkles? Because they’re fun and happy! Of course, feel free to use whatever sprinkles make you happy. :)

Peanut Butter Cup Rice Krispie Treats

Ingredients:                                                    2015-05-15-5871

4 cups mini marshmallows

3 tablespoons butter

6 cups Rice Krispie cereal, or any brand of puffed rice cereal

1/2 cup creamy peanut butter

15 Easter shaped peanut butter eggs chopped , or 18-24 regular peanut butter cups, or fun size candy bars

(Reese’s peanut butter eggs, Snickers eggs, and Snickers peanut butter eggs were used)

2 cups milk chocolate chips or your favorite good quality milk chocolate

1 tablespoon butter flavored shortening or regular shortening

Confetti sprinkles, or any kind you prefer

Directions:

1. Spray a 9×13-inch pan with cooking spray. Set aside.

2. In a large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in peanut butter.

3. Add the cereal to the mixture and stir until well coated. Press half of the cereal mixture into sprayed 9×13-inch pan. Place the chopped candy on top of the cereal mixture. It will seem like a lot of candy, but it ends up being the perfect amount. Press the remaining cereal mixture over the of the candy. Allow to cool completely.

4. In a microwave safe bowl, microwave the chocolate chips and shortening. Microwave for 30 seconds at a time. Stir after each 30 second interval. Continue heating 30 seconds at a time until chocolate is melted and smooth. Spread chocolate evenly over the rice krispie treats. Garnish with confetti sprinkles, or any sprinkles you prefer. Once chocolate is set completely, cut and serve.

Makes 16-20 Servings

You know how sometimes you need a cookie that you can whip together quickly and be done? Well this is one of those cookies and it’s a yummy one!

School is starting soon, or has already started all across the country. If you have kids you know that means busy, busy, busy. Even if you don’t have kids, you still know how busy life can be. Life tends to get a little crazy at times.

An easy go-to cookie seemed like the perfect choice for today.

Today’s cookie is a cookie that comes together very quickly with a few simple ingredients. Most, or all of these ingredients you probably have sitting in your pantry right now.

So let’s started, we have cookies to make!

These cookies are great all by themselves, or you can dip them in chocolate. As you can see, I have dipped my cookies in chocolate just to give them a special little touch.

It just depends on how you’re feeling that day.

These are most of the simple ingredients you will need for these cookies. There are only a few chocolates in the photograph but you will want to have a full bag on hand. Also I forgot to include the baking soda in the picture, sorry. :(

These cookies have plenty of oatmeal in them, yet they are still very moist. I think you will find it surprising how good cookies can be with just a few simple ingredients. :)

When your cookies are cool and you’re ready to dip them please remember you can use any kind of chocolate that makes you happy! I used Dove because I love how easy it is to work with. So I pick it up when it’s on sale.

Anyway, you could use chocolate melts, chocolate chips or any other kind of chocolate you prefer! Then add a few sprinkles, and you’re set!

Now all you need is a tall glass of cold milk and you’ve got a great snack!

 Double Chocolate Peanut Butter Oatmeal Cookies

1/2 cup dark chocolate peanut butter

1/2 cup brown sugar

1 large egg

1-1/4 cups quick-cooking oats, any brand

1 package (3.4 oz.) vanilla instant pudding mix

3/4 teaspoon baking soda

1 bag (9.5 oz.) Dove milk chocolate, chocolate chips, or any chocolate you prefer

chocolate jimmies, optional

Directions:

1. Preheat oven to 350 degrees F. Line two baking sheets with baking mats or parchment paper; set aside.

2. Place chocolate peanut butter and brown sugar into a large mixing bowl. Beat until fluffy. Beat in egg. Add oats, vanilla pudding mix, and baking soda to creamed mixture; mix well.

2. With a medium cookie scoop, place dough onto prepared baking sheets, about 1 inch apart. Bake for 6-8 minutes and remove from oven. My cookies took exactly 7 minutes. Let cookies cool on baking sheet for 2-3 minutes, then move to wire rack to cool completely.

3. Line large cookie sheet with waxed paper; set aside. In a microwave safe bowl, melt chocolate for 30 seconds at a time until melted well and smooth. Dip each cookie into chocolate, using as much or as little as desired. Allow excess chocolate to drip off. Place cookie on waxed paper, if using sprinkles add immediately. Allow cookies to rest until chocolate has set up and can be touched.

*Note: You will probably have a little extra melted chocolate.

Make 18 cookies

 These cookies are truly loaded with what I consider special ingredients. But yet, the majority of these special ingredients are things that you probably have right now in your pantry.

I saw this recipe in Midwest Living, and just had to make these. I knew right away with a few adaptations these cookies would be wonderful – and they were!

Not that there’s anything wrong with their version, but when you bake a lot, you’re always creating and changing recipes. :)

When you make these at home, you can certainly adapt these any way you want to, and that’s the best part.
