So I was paging through one of my many, many cookbooks looking for something new to make. This is quite a challenge because I am always cooking or baking something.
Nonetheless, I found just the right recipe for tonight. The recipe I was going to adapt for dessert tonight. There was nothing wrong with the recipe, as a matter of fact it looked like a rather good recipe.
But me being me, I’m HUGE on using what you already have – tonight I have dulce de leche cream cheese to use. So I made a few changes and I now have a recipe for Dulce de Leche Swirl Brownies. Sounds yummy!
This recipe is great because it can easily be adapted for different flavors of cream cheese and different extracts. It’s always so much fun to play with different flavors. But that’s what we do as bakers and cooks, right?
You know the wonderful new cream cheese spreads from Kraft? They look like this. As I mentioned, I had the dulce de leche caramel spread. A while back, I bought it on sale, and with a coupon, so I picked it up for a really great price! Now it was time to see what I could do with it.
I really wanted to see how the flavor was in something, not just alone as a spread. By the way if you haven’t tried this stuff it is fabulous! Now I can say it’s great for baking also.
Sorry, the picture is kind of dark. What you’re looking at is the dulce de leche swirled throughout the chocolate batter, then topped with chocolate chips, before it went into the oven. The dulce de leche caramel cream cheese truly was a very nice touch.
Should we get to what my three Taste Testers said?
Taste Tester 1: He was kindest, he said it was the perfect blend of caramel and chocolate. He said that he liked how moist the brownies were and he could eat these any time. Taste Tester 1 takes his job very seriously! He is always willing to tell me what he likes and doesn’t like. Especially what he doesn’t like! Although, sometimes I do have to paraphrase for him. He is chronologically challenged.
Taste Tester 2: Taste Tester 2 said he really liked the smooth yummy flavor the dulce de leche added to the brownies. He gave the brownies 4 out of 5 stars. As he puts it, he doesn’t give out 5 stars too easily, he saves 5 out of 5 for “special flavors”. Did I mention he ate a row of brownies by himself?
Taste Tester 3: He said they were good and he liked the balance of flavors. He didn’t want to eat them at first because he thought they would be too rich and gooey, but they’re not at all.
I rate this recipe a 4.5 (out of 5)
Dulce de Leche Swirl Brownies
1 (8-ounce) container dulce de leche cream cheese, softened
1 large egg
1/2 teaspoon vanilla extract
1 package chocolate fuge or chocolate cake mix, cake mix not brownie mix
1 (5-ounce) can evaporated milk
1/2 cup (1 stick) butter, melted
Optional: 1/3 cup semisweet chocolate chips
1. Either generously spray 9-inch square baking pan with non-stick spray, or line completely with foil. Preheat oven to 350 degrees F.
2. Beat the dulce de leche cream cheese, egg, and vanilla in a medium bowl with electric mixer on medium speed 1 minute or until blended smooth.
3. Mix the cake mix, evaporated milk, and melted butter in a medium bowl with a wooden spoon or until blended. Spread 3/4 cup dough in prepared pan. Dough will be thick and will need to actually be spread by hand. It isn’t thin like your usual brownie batter. Spoon the cream cheese mixture over, then top with spoonfuls of remaining dough. Swirl mixture with the back of a knife several times for marbled design. If desired sprinkle with chocolate chips.
4. Bake 38 to 43 minutes or until toothpick inserted 1 inch from side of pan comes out clean. Transfer to a wire rack and cool completely. Cut into squares. Store in refrigerator.
* Be sure not to over bake these brownies. Baking them to just the right point is the trick with any good brownie. This is a very special brownie – bake it with love! ♥♥♥
