It sure feel good to be at the beginning of a new year, but I have to say the cold can make life challenging. Of course not everyone lives in a cold-weather state, but this Winter seems to keep sharing the cold! So a little warm comfort food seems to be in order here.

Today I prepared for you what I think is the perfect cold weather  dessert for you family and friends…my Skillet Baked Caramel Apple Dessert.

Being that it is Winter, and so much of the country is experiencing some really cold weather right now I wanted to develop a dessert that you can throw together in very little time. The kids love it served warm with a scoop of ice cream and delicious warm caramel sauce drizzled across the top. My Skillet Baked Caramel Apple Dessert is such a nice way to finish off the meal, especially on a cold night!

Orange Blossom Cookies

When you want a dessert for a potluck, bake sale, or any family gathering. this is a great go-to recipe. They’re easy to make, and their pleasant orange flavor and their bright color makes people take notice.

After the Super Bowl yesterday I thought it might be nice to go with something a little lighter today. I hope you enjoy these Orange Blossom Cookies!

This cookie is sunny and light and very enjoyable. People of all ages enjoy this cookie, and that’s always a good thing. It’s nice to have a few recipes like this in your collection.

To be honest with you I stumbled across a recipe for soft lemonade cookies on line at Taste of Home when I was looking for a recipe for something else. I never did find the other recipe, but that’s okay. I found this one and adapted it a bit, and made it orange.

This cookie is refreshing and gives you a chance to enjoy a little something after a meal or whenever, without being too much. This cookie is perfect for warm weather days. Now we just some warm weather!

It has been very cold here to say the least! The governor has cancelled school because it’s just too cold to have kids out in this kind of weather.

When cold weather hits I think we all kind of look for our own favorite comfort foods. Here, on of our comfort foods is chocolate chip cookies.

At first glance these may look like any other chocolate chip bar. However, the wonderful mix of chocolate and the extra touch of chopped salted caramel milk chocolate caramel makes them so much more!

If you’re not a fan of milk chocolate that’s fine, just use a different kind of chocolate. Check out my recipe, it’s easy to follow, easy to change, and it doesn’t disappoint. 🙂

Double Chocolate Chunk Espresso Cake with Toffee Almond Glaze

Last night I was prepping for one of our basic Sunday Dinners. In my head is was going through the various parts of the meal, but I didn’t have a dessert.

It’s not too often I have this problem. I simply didn’t know what to make for dessert! No dessert on a Sunday, I feel a mutiny about to take place. 🙂

Oh, for the meal, (oven-baked lemon pepper tilapia, oven roasted Brussels sprouts, and seasoned pan-fried potatoes, heavy on season, a touch of salt, light on oil), just in case you were wondering. Nothing too grandiose. We like simple, basic food.

Back to dessert, I didn’t know what to make, but in the back of my head I was thinking maybe some kind of chocolate cake, but something different. My fellas always love a good chocolate cake!

This cake is delicious, comes together quickly, and is guaranteed to get a YUM from everyone having a piece!

Skillet Baked Halloween Chocolate Chip Cookie

For those of you that have never done a skillet cookie before, why not give this one a try? This chocolate chip cookie is America’s cookie, done a little differently! Baking a cookie skillet style just makes it more fun, less work, and easy to put a big scoop of ice cream on. 🙂

For those of you new to Megamommy, WELCOME!

If you don’t know this already, I love skillet cookies, cakes, and brownies. So does my family. I used to hear about skillet cookies when I was a little girl. Then several years ago I saw Martha do one. At the time I thought hmm, but why?

Now, I say why not? They turn out get every time and it’s so easy to throw a skillet cookie in the oven before you cook your meal. Then you have a delicious dessert just waiting for you after dinner. 🙂

Mug Cakes Done Two Ways

I love a good no bake dessert, especially when it’s hotter than blazes outside! Turning on the oven to bake a cake, cookies, or anything else when it’s 95+ degrees, is not my first choice.

Mug cakes are a great no bake dessert perfect for hot weather!

These mug cakes are super quick to make, take just a few simple ingredients and can easily be changed for individual likes. We see mug cakes, brownies, and muffins all over the place these days. I think it’s safe to say, most people are at least familiar with the concept.

I love the fact that you can easily personalize mug cakes with very little effort. We all want different things on different days. With these you can easily change each person’s mug cake to fit their particular craving of the day! 🙂

The trick to these is two fold – always generously spray your mug or glass you are making the cake in AND always stir your ingredients well before putting the mug in the microwave oven!

Although I love the microwave for mug treats, I simply don’t use it for cooking or baking. So this is a very rare occasion for me. I will be making mug cakes and other mug treats again with different flavor combinations. Stay tuned. 🙂

Keep in mind you can easily make mug cakes a little more upscale by simply modifying your ingredients to suit adult taste buds a little better. The ingredients you add are up to you! A few of my favorites are a tablespoon of good quality chocolate or a favorite flavor of coffee creamer.

You could even add a little rum or Grand Marnier for adults who like alcohol in their desserts. Of course, using a prettier mug (or vessel for your cakes) is always an option on those days you want something just a little prettier.

Super Easy Ice Cream Sandwiches

The next time your kids, or family members ask for ice cream sandwiches give this method a try!

 

Purchase your favorite flavor of ice cream. Any ice cream will do. I usually go for vanilla because you can do anything with it.

Then, scoop your favorite flavor of ice cream between two store-bought cookies.

There are tons of cookies out there now that are wonderful; like peanut butter chocolate chip, M&M, any multi-chip cookie, or any cookie you like. This is one of the few times you want a store-bought cookie because they’re usually fairly solid.

Now roll the edges of the ice cream sandwich in crushed cereal, use up all those little cereal crumbs on the bottom of the cereal bag. A few of our favorites are any type of fruity pebbles or rings, peanut butter and chocolate puffs, and any type of cereal with mini marshmallows, any brandd will do. Just make sure the crumbs are crushed small enough to roll the sandwich in, but not a powder.

 

*MM Tip: You could use sprinkles but it can get expensive, plus this is a great way to use up all those crumbs in the bottom of the box nobody every wants to eat. Save the sprinkles for a birthday party or such!

For maximum enjoyment these must be eaten outside! 🙂

Chocolate Mocha Cobbler

Chocolate Mocha Cobbler

I must admit this one is a first for me! I have made a lot of different things, but never chocolate cobbler. Honestly, the first time I saw this recipe was a few years agos in one of my many recipe collections. At the time I thought hmm, that’s different. It sounded good; but cobbler without fruit?

I never really gave it much thought again until recently, when I stumbled upon the recipe again. So, I pondered it for a few days and now I get it. If you have any picky eaters in your house, this is perfect!

Chocolate Cobbler is just that, cobbler or warm baked loveliness, made with plenty of chocolate, baked in the oven to perfection and topped off with your favorite topping. Doesn’t that sound just about perfect?

I decided if Chocolate Cobbler is as good as they say, Chocolate Mocha Cobbler should be even better! By the way, if you love Mocha flavor top this off with any Mocha ice cream and you should be one happy camper! 🙂

With chocolate cobbler there’s no battle over what fruit should be used. Basically a chocolate cobbler should bake up sort-of like brownies over a thick fudgy pudding and this recipe does just that!

 Toppings of choice for my oldest must always include ice cream. Here we used coffee flavored (all natural) Haagen-Dazs, and mini chocolate chips. I know, sort of skimpy on the ice cream. Don’t worry, he’s already off to get another scoop. 🙂

This is my youngest son’s version. He’s all about layers and layers of chocolate, preferably dark chocolate! Of course he starts out with whip cream, then chocolate sauce, and of course mini chocolate chips.

 

Chocolate Mocha Cobbler

Ingredients                                                                                   112

Bottom Layer

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/4 – 1/2 teaspoon salt

2 tablespoons powdered cocoa

1/2 cup White Chocolate Mocha Creamer, brought to room temperature

3 tablespoons melted butter

Top Layer

1/4 cup sugar

1/4 cup brown sugar

2 tablespoons cocoa

3/4 cup White Chocolate Mocha Creamer, brought to room temperature

3/4 cup hot water

 

Directions

1. Preheat oven to 350 degrees F. Spray 11 x 7-in. baking pan with nonstick spray. Set aside.

2. In a bowl, combine the flour, baking powder, salt, and cocoa powder. Stir in milk and melted butter until smooth. Spread into a greased 11 x 7-in. baking pan.

3. Combine the sugar, brown sugar, and 2 tablespoons of cocoa; sprinkle over batter. Pour coffee creamer at room temperature, and hot water over top (do not stir).

4. Bake at 350 degrees for 40-45 minutes or until top of cake spring back when lightly touched. Serve warm with ice cream and toppings of choice, if desired.

Serves 6-8

MM Notes:

* I chose White Chocolate Mocha creamer because we love the flavor of Mocha here, and because I like the way the flavor of white chocolate and darker chocolate play off of each other. Feel free to use any flavor creamer you want to give this dessert a new spin.

* Some of the pictures also have caramel sauce on them. Caramel is also fantastic with the chocolate cobbler and topped off with a little chopped chocolate with sea salt!

U-G-L-Y Bars

Today’s simple yet delicious dessert is called U-G-L-Y Bars. They’re not exactly beautiful, but they’re darn good. 🙂

I don’t know how it is for you guys, but Wednesday is always sort of a strange day at our house. Here’s a quick snap shot of what’s happening here. The kids have about a month left of school. As much as they love school, they’re ready for a break. I totally get it! I’m sure kids everywhere in the country are ready for a break. They’ve been working hard all year.

It’s now May 1st, AND it’s still cold here!

 I have never experienced anything like this. I keep telling my kids soon it will be warm, and summer really is on the way. Oh, by the way, it’s about 40 degrees here. That’s right my friends 40 degrees on May 1st! It’s unusually cold for this time of year. 🙁

So I try to make a quick mid-week dessert on Wednesdays, because it’s nice to have a simple, yet yummy little something with dinner.

Today I made these little delights I proudly call my U-G-L-Y Bars. Say what? That’s right I said it, U-G-L-Y Bars. I mean, they’re not hideous, but they aren’t exactly pretty either. But they do have a nice flavor to them.

The flavor of these bars is pretty darn good, and I used what I had. I’ve told you guys many times – I don’t like to waste food! Sometimes people confuse that with being stingy. Not at all the same thing! Remember, anyone can spend money. But why spend extra when you don’t have to? Always use what you have first. 🙂

U-G-L-Y Bars

INGREDIENTS

1 package (regular size) chocolate cake mix or devil’s food

1/2 cup (1 stick) butter, softened

2 large eggs, room temperature

3 tablespoons milk (regular, chocolate, or almond)

1/2 cup M&M’s any flavor

1/2 cup Caramel Bits

1/2 cup chocolate chips, any flavor

Optional: 1 box (3.5 ounces) White Fudge Flipz – save for topping

DIRECTIONS

1. Preheat oven to 350 degrees. Spray a 13 x 9-inch baking pan with nonstick cooking spray.

2. In a large bowl, mix the cake mix, butter, eggs, and milk in a large bowl with a large spoon until well blended. Mix in the M&M’s, Caramel Bits, and chocolate chips. Spread into pan, you can grease your fingers with butter, or slip a small plastic bag over your hand sprayed with nonstick spray and use as a loose mit. Be sure mixture is pressed evenly into the pan.

3. Either dump box of Flipz into a plastic sealable bag and crush to desired texture, or if you prefer use the pretzels in mostly whole pieces (the way they come out of the box). Pour the pretzels into a bowl first to ensure you can evenly distribute them evenly over the entire pan of bars. Gently press the pretzels into the dough.

4. Bake 20 to 25 minutes or until just set. Cool completely on a wire rack. Cut into bars.
