Cupcakes just seem to be one of those things everyone loves! Really, how can you go wrong with a cupcake? According to my boys, the only thing better than a cupcake is a cupcake with sprinkles! So chocolate cupcakes with sprinkles it is – I hope you agree!

You guys know I am not opposed to using a cake mix to save time when baking. But today I wanted to make a homemade cupcake! That urge doesn’t hit too often so I went with it and I’m glad I did! :)

There’s nothing like the taste of a homemade chocolate cupcake! So incredible yummy!

The chocolate ganache will dry for you no problem! I decided to photograph while they were still drying because sometimes it’s nice to see something other than regular frosting on a cupcake. Or maybe that’s just the blogger in me…not sure! :)

Today I share with you my Simple Chocolate Ganache Cupcakes..enjoy!


Hope you guys like chocolate ganache! Honestly, chocolate ganache is without a doubt one of my absolute favorites! If you don’t like ganache you can always use regular frosting.


The batter for these cupcakes is a little thicker batter than you may be used to, but that’s the way you want it. Don’t forget to put a little water in your empty muffin cups, it helps the cupcakes bake better. Please trust me on this!


The cupcakes will crack just a bit on top to let the hot air escape, that’s perfectly natural!


Dip the top of each cupcake into the ganache. Place on a wire rack to set. Whether you use sprinkles or not is up to you. :)



Simple Chocolate Ganache Cupcakes

Ingredients:                                             2015-06-03-5809 Simple Chocolate Ganache Cupcakes

1 cup (2 sticks) unsalted butter, softened

1 cup sugar

4 large eggs

2 cups all-purpose flour

3 teaspoons baking powder

1/2 teaspoon salt

4-6 tablespoons cocoa powder (4 tablespoons were used for these cupcakes)

1 teaspoon vanilla

1 (6 oz.) container vanilla or plain yogurt

2 tablespoons milk

Chocolate Ganache

2 cups (12 ounces) milk chocolate chips, or other good milk chocolate

1/2 cup heavy whipping cream


1. Preheat oven to 350 degrees F. Line 18 muffin cups with paper liners.

2. In a large bowl combine all the cupcake ingredients and beat with an electric mixer until smooth and well combined, about 2 to 3 minutes. Batter will be thick. Spoon or scoop the batter into the cups. Bale for 20 minutes. Remove pans from oven and cool for 5 minutes. Remove cupcakes and cool on a wire rack.

3. Place chocolate chips and heavy cream in a small bowl. Heat in microwave until smooth and melted, stirring every 20 seconds. It should take about 1 minute total. Or, in a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Dip the top of each cupcake into ganache; place on wire rack to set, decorate with sprinkles if desired.

Store in an airtight container in the refrigerator. Let stand at room temperature before serving.

Makes 18 Servings

I really believe sometimes it’s nice to be reminded of the simple things you CAN do! :)

Anyhoo, I call these cupcakes my Smiley Surprise Cupcakes for a few reasons. Let’ me explain…with these cupcakes the frosting is in the middle, I have doctored up a cake mix to include a few more ingredients that not only add calcium and protein, but also add GREAT flavor, and then of course there’s the bright smiley face added to the top. So you see, I just had to go with Smiley Surprise Cupcakes!

Some people like to make all their cakes/cupcakes and that’s fine. To each their own. I say so what if you start with a mix? You’re still taking the time to make a wonderful treat for your family, friends or co-workers! Just so you know, people of all ages enjoy these delicious cupcakes. Yes adults love them too!

Okay, before we go any further please don’t let the Pop Rocks scare you!

Trust me, I wasn’t crazy about the idea until my kids convinced me to give it a whirl. Surprisingly, the flavor is absolutely wonderful!

These cupcakes would be great for a summer get-together where there will be lots of kids attending. Of course, keep the cupcakes cold until you serve them.

My boys loved these cupcakes! As someone that doesn’t usually eat Pop Rocks I can truly say I liked the subtle mixed flavor taste happening in the frosting.

Give my Orange Supreme Pop Rock Cupcakes a try. I’m quite sure you will be pleasantly surprised!


As my kids were happy to point out The Dollar Tree usually has Pop Rocks available. The flavors vary depending upon the time of year, but that’s probably the cheapest place to get them. The Pop Rocks come in 3-Packs, and they’re in with the regular candy.


On to frosting. How you frost the cupcakes it totally up to you. I took a more casual approach to frosting these cupcakes, as you can see. Because I knew they would be inhaled by my boys and their friends.

Did I say that? I meant enjoyed. :)


There are many different ways to decorate the tops of these cupcakes. Go with whatever you like. I like the way the Jumbo Confetti sprinkles look on these particular cupcakes, but feel free to go with whatever you like.


Orange Supreme Pop Rock Cupcakes

Whether you’re young, or just young at heart this cupcake is for you! These wonderfully orange cupcakes are topped off with a frosting that’s fun and delicious!     

ingredients:                                                                2014-04-17_106 Orange Supreme Pop Rock Cupcakes

1 package Duncan Hines Orange Supreme cake mix, or any other flavor you prefer

*1 container (6 oz.) orange crème yogurt – see note at bottom

Pop Rock Frosting

1 stick butter, softened

3 cups powdered sugar

1 – 3 tablespoons heavy cream, this will depend on how thick you want your frosting

*6 packets (0.24 oz.) Pop Rocks candy – see note at bottom

Jumbo Confetti sprinkles, if desired


1. In a large bowl, combine the cake mix and ingredients called for on package according to instructions. Fold in yogurt. Follow baking instructions for cupcakes and bake according to recommended time. Allow cupcakes to cool completely.


2. Beat softened butter until smooth. On medium speed, slowly add powdered sugar. When the two are combined, beat mixture on high until light and fluffy. Add heavy cream 1 tablespoon at a time, mixing  well after each addition. When desired consistency is reached stir in 6 envelopes of pop rocks.

3.  Frost cupcakes as desired. Decorate with with a confetti sprinkles, or decoration of choice. Chill cupcakes for 30 minutes to set.

 * The orange crème yogurt is completely optional. This orange supreme cake mix is already wonderfully moist. I simply like what the yogurt does for the cake, but you don’t have to add the yogurt.

* I used a combination of Pop Rocks for my cupcakes – 3 orange, 2 cherry and 1 tropical punch. The mixture gives a nice color and flavor.. You can use just one flavor of Pop Rocks, or several like I did for a fun combination.

These cupcakes are SO good!  I can’t wait to tell you about them!!

So, I was about to start baking the other day. I knew exactly what kind of cupcake I wanted to create. I had every single detail planned out in my head. That’s right every single detail!

Then of course, one of boys came into the kitchen and practically begged me to make marble cupcakes for him, being that I was just making cupcakes anyway, as he put it.

Then he proceeded to remind me that marble is his all time favorite and I almost never make them. Ugh! So of course, I told him I would see what I could do. :)

To make a long story short, these cupcakes aren’t exactly a true malt cupcake, and they’re definitely not a true marble cupcake. Somewhere between marble and malt the two flavors come together and it’s like a match made in Heaven! They’re so good together!

Cherry Chocolate Cupcakes

I call these Cherry Chocolate Cupcakes, you could call these Chocolate Cherry Cupcakes, or even Schwarzwaldkuchen Cupcakes, if you really wanted to.

No matter what you call them the classic flavor combination is wonderful!

Knowing I wanted to play up the delicious cherry flavor for summer, I thought this should be a no brainer. This cupcake is simply my little spin on this great flavor combination.

You guys can’t believe how this little cupcake adventure played out!

While I was in the process of making the cupcakes I came to find out my guys don’t like chunks of fruit in their desserts; unless it’s bananas! What? Can you believe that? No fruit chunks!!

I just don’t get it but whatever…

Mini chocolate chips are an easy and delicious topping for those that don’t necessarily want fruit on the top of their cupcakes. That group of people would definitely include my youngest son who has lots of issues with texture.

I could write a book on what on what this boy will and will not eat! Anyhoo, let’s get back to the cupcakes.

Whether you top the cupcakes with mini chocolate chips or maraschino cherries is up to you. They’re both very good. :)


In case you’re wondering how the whole cupcake escapade turned out, keep reading for the quick recap.

Alpha Male: Ate one cupcake and loved the flavor! He thought he deserved an Oscar for acting as though the microscopic pieces of cherry didn’t bother him. Of course they did! He then quickly reminded me he usually doesn’t eat anything with cherries in it.

All-American Kid: Loved the flavor and look! Rather quickly after eating his two cupcakes he told me the only reason people eat cupcakes is to have something to put frosting on. He was quite shocked I didn’t know that. What? Then he asked me when I’m going to make more cookies. According to him, he hasn’t had a good cookie in almost two days now.

Mister Picky Pants: Did I mention Mr. Picky Pants doesn’t hesitate to let everyone know when something isn’t right in his world? Well he doesn’t. Of course he had to hit a piece of cherry! Although it was tiny, it was still a piece of cherry.

After he calmed down from what he considered to be almost an attack, he managed to let me know he LOVED the flavor of the cupcakes! Immediately followed by, he just can’t deal with pieces of cherry in his mouth when he’s eating dessert.

Final Conclusion: All three absolutely loved the all around flavor of the Cherry Chocolate Cupcakes! They especially loved the addition of the almond extract. Who doesn’t, right? But, the idea of actually having real pieces of fruit in your dessert is something that my guys just don’t like.

Oh, one more thing at least I didn’t use the fancy frosting (they mean buttercream), so the frosting, according to them, was also very good! Their words, not mine. :)

Cherry Chocolate Cupcakes

Ingredients                                                               025

15.25 ounce package chocolate cake mix

2/3 cup chocolate milk (you could use regular milk if you prefer)

1/3 cup water

1/3 cup oil

3 eggs, brought to room temperature

21-ounce can cherry pie filling

2 teaspoons almond extract, divided

16-ounce container vanilla frosting

maraschino cherries for garnishing, if desired

mini chocolate chips for garnishing, if desired


1. Preheat oven to 350 degrees Fahrenheit. Line 24 muffin cups with paper liners.

2. In a large mixing bowl or stand mixer, combine cake mix, chocolate milk, water, pie filling, eggs and 1 teaspoon of almond extract. The cherries will break up somewhat, but if you have people that don’t like fruit flavor, but not chunks this is a good thing. :)

3. Pour batter into paper-lined muffin cups. You will use about 1/4-cup of batter per muffin cup for regular size cupcakes.

4. Bake at 350 degrees for 20 to 25 minutes, until a toothpick inserted comes out clean. Cool cupcakes completely on a wire rack.

5. Add remaining teaspoon of almond extract to vanilla frosting and stir well by hand. Frost cupcakes with vanilla frosting; top each with a maraschino cherry, mini chocolate chips, or both.

Makes 24 Servings

If you are making these cupcakes for people that don’t like fruit chunks simply use cherry extract in the cupcake batter. :)

 All right, let me start out by saying these little delights can easily be made into strawberry cupcakes or strawberry muffins.

So we’ve all heard of Hungry Girl, right? With all of her tricks and tips for baking and cooking with substitutions for just about everything that has fat and/or calories.

Well the other day I was in Barnes & Noble and I was checking out her cookbook. There are lots of neat recipes in there, and I love the pink!

Anyway, I didn’t write down any recipes, Really I was looking more at her approach, you know her concepts and theories. And, of course the wheels in my mind started spinning.

I am well aware that just about everyone that bakes or cooks has done different soda pop combinations, but I wanted a little more hands on experience. Until now, I have experimented with soda a little, but not that much. Now I have my personal favorites, and I plan on sharing them all with you. I hope you like them.

This time around I went with what I call Strawberry Soda Muffins. Why muffins and not cupcakes you ask? Just a personal choice I made after I glazed them, plus I always love a scrumptious vanilla glaze.

Just try them and let me know what you think. :)

So here we go…


Fresh from the oven..the smell of yummy strawberry floating through the house. I started with a strawberry cake mix and added strawberry soda.

That’s it, no eggs, no oil, nothing else. It works best if the strawberry soda is room temp. when you add it to the cake mix.

You can find small bottles of strawberry soda at Target. It seems to be kind of a hit and miss thing. Sometimes they have it, sometimes they don’t.

 Strawberry delights cooling and waiting to be glazed. Real strawberries could easily be added for you strawberry lover’s out there.

The only reason I didn’t add any real strawberries, is because here at the Haus of Mega, my peeps have serious issues with pieces of real strawberry, and pieces of real raspberry in anything baked!

They claim it’s a texture thing…


My Strawberry Soda Pop Muffins have now been glazed with a nice scrumptious vanilla glaze. You can always add more vanilla to the glaze if you want to. That’s up to you.


Strawberry Soda Pop Muffins – ready to be served!

Strawberry Soda Pop Muffins


1 box (15.25 ounce) Strawberry moist-style cake mix

1 bottle (12 ounce) Strawberry Soda


3/4 cup powdered sugar

1 1/2 tablespoons milk for glaze (or Sweet Cream Natural Bliss Creamer)

* I used Coffee Mate Sweet Cream Natural Bliss coffee creamer, I keep this in the fridge because I use it all the time. The taste is wonderful! Regular milk will work just fine.

vanilla extract, optional – add 1/2 tsp. at a time


1. Preheat oven to 350 degrees. Line muffin pans with cupcake liners, or spray muffin pans with nonstick spray.

2. Combine cake mix with soda in a large bowl using a whisk. You don’t need a mixer for these. Whisk the two together thoroughly.

3. Transfer batter to muffin pans filling muffin cups about two thirds full. Bake in the oven until a knife inserted into the center comes out clean. Check back of cake mix box for exact baking time.

4. For glaze, in small bowl, stir together powdered sugar, milk (or creamer), and vanilla extract, 1/2 teaspoon at a time, until a glaze consistency. Drizzle glaze over muffins. Allow to dry completely.

Valentine’s Funfetti Cupcakes: Done Two Ways



Today I did something a little different. I used the same cupcake two different ways, both of which are simple & delicious!


Being that Valentine’s day is almost here I thought I would make my guys another of their favorites – Mini Cupcakes.

I apologize in advance to those of you that like an exact recipe to follow. I know some people don’t like just going with the flow, and I’m sorry.

Today’s recipe is very loosey goosey. Let’s just call it a guide, more than a recipe. How’s that? If you don’t already cook or bake like that, you will. Most kids have no problem telling you what they like and what they don’t.

As you can see in picture one, on half of the Mini Cupcakes I used a glaze with cute Valentine’s sprinkles of course. On the other half I used pink vanilla frosting with different Valentine’s Day sprinkles.

We were equally divided on here on which one we liked best. So I guess it’s like they say – everyone likes something different. You know how it is, everyone really does seem to like something different. :)


So here are most of your basic ingredients. Of course I don’t have the oil photographed or the soda I used in the glazed cupcakes.

If you already bake with yogurt at times, you know how wonderful it can be in the right recipes. The best part is you get a hint of the flavor, but it’s very subtle. Plus it’s a great way to add a little more nutrition, yes even to cupcakes.


As you can see the yogurt barely changes the color of the cupcake batter.

Valentine’s Funfetti Cupcakes


1 Pillsbury Funfetti Cake Mix

water, egg & oil as called for on back of cake box

1 (6 oz.) container yogurt, I used Yoplait Strawberry Banana

Powdered Sugar

Vanilla extract

Water, or soda, I used Sierra Mist Cranberry Splash

1 container pink vanilla frosting, or your favorite vanilla frosting recipe colored pink with a few drops of red food coloring, you could even add a little extract here (strawberry, or whatever) to give the frosting a special flavor

Valentine’s Sprinkles, if desired

Megamommy Note: By adding strawberry banana yogurt to the batter you will get a hint of strawberry banana flavor and a slightly pink color. 

Most kids like the flavors of both strawberry and banana. But, when you make these cupcakes again later on, experiment with different combinations to see which your family likes best.


1. Preheat oven to 350 degrees F. Spray mini muffins cups with nonstick cooking spray; set aside.  Prepare cake mix following package directions. Fold one (6 oz.) container of yogurt into cake batter.

2. Bake for time recommended on back of cake mix. For mini cupcakes this is usually 15-20 minutes or until toothpick inserted into center comes out clean. Cool in pans apx. 10 minutes. Remove to wire racks; cool completely.

3. Frost mini cupcakes with vanilla frosting (or any flavor) you choose. Decorate with sprinkles. Or follow steps listed, to glaze some, or all of the mini cupcakes.

For Pink Glaze:

1/4 cup milk, or any flavor soda you want

2 cups powdered sugar

1 tsp. vanilla (omit if using flavored soda)

In a mixing bowl combine ingredients with a whisk. Stir until glaze is smooth. You could heat this slightly on the stove, but there’s really no need to heat the mixture. When adding the liquid to the powdered sugar, keep in mind you want the glaze thin, but not too thin.

Simply dunk each cupcake in the glaze with a fork, or by hand. Place mini cupcakes on a rack to dry. Decorate with sprinkles. Allow to dry for approximately 15 minutes, or until no longer wet.

Makes 48-60 Mini Cupcakes
