We all love peanut butter, right? What about almond butter? As much we all love peanut butter, sometimes a change is nice just to mix things up a bit.

Almond butter is a fun & tasty way to give things a fun new spin. I know some people use almond butter and various nut butters all the time, and some people not so much. No problem, here’s an easy way to do it.

These mini pies have such a nice smooth flavor with the almond butter, but really it’s kind of a subtle flavor change and I love that!

This dessert is wonderful because it’s just a little different, but still has those familiar favorites. Hope you give this one a try!

Okay I admit it, I don’t do a lot of snacks or dips. Being that I’m not a big snacker I just don’t do them that often. But it has been brought to my attention that I should share some of “my good dips” with you guys. So funny. :)

But I do have quite a few dips and snacks that I make for family get-togethers and such. We all have our favorites, right?

This dip is sweet and creamy and fun to share with family and friends.

When you think Chocolate Chip Dip, think yummy and creamy with plenty of mini chocolate chips. This recipe is one of those simple dips you can whip up whenever you want to serve a crowd pleaser.

We really like cinnamon pita chips with this chocolate chip dip. Apple slices are a close second, and graham cracker sticks are also very good.

Chocolate Chip Dip

Ingredients:                                                                                                               2015-07-17-6452

1 package (8 ounces) Neufchatel (reduced fat) cream cheese, softened (regular cream cheese also works fine)

1/2 cup (1 stick) unsalted butter, softened

3/4 cup powdered sugar

2 tablespoons brown sugar

1 1/2 teaspoons vanilla

3/4 cup miniature semisweet chocolate chips

Cinnamon pita chips, apple slices, graham cracker sticks – use whatever your favorite is for dipping

Directions:

In a medium bowl beat cream cheese and butter until light and fluffy. Add the sugars and vanilla; beat until smooth. Stir in chocolate chips by hand. Serve with cinnamon pita chips, apple slices or graham crackers.

Makes 16 servings

My Raspberry Cream Cheese Swirl Banana Muffins make a great snack anytime of day!

Some of my favorite recipes start with a cake mix. Of course I can make a cake from scratch, I just usually choose not to. Cakes mixes are just so much fun to play with! So today we start with a cake mix. What happens in the kitchen stays in the kitchen! :)

Being that I make a lot of different types of banana muffins/bread for different occasions I have a handful of different recipes I use as a starting point. This is hands down the easiest way to make banana bread/muffins I know of.

Just wait until you taste the raspberry cream cheese that is swirled into these muffins! It is SO good! Raspberries are always so wonderful in the Spring. I must say, I ate a lot of raspberries making these muffins!!

Baked Donuts are one of my absolute favorite treats to make! There are so many WONDERFUL flavors that a person can come up with, it just makes it so much fun every time!

I will be completely honest with you guys. Sometimes I make the mix from scratch and sometimes I don’t. You can get a very, very good donut using a cake mix! It all depends on what you add to the mix.

Then of course there’s the frosting. I am not much of a frosting person, but I love this homemade frosting! It is SO incredible wonderful! My guys couldn’t get enough!

Guess what? We actually made it to just a bit over 80 degrees the other day! Can you believe it? It has been over eight months since it has been that warm! That’s right eight months. I almost forgot what 80 degrees feels like!

Then I started thinking about wonderful warm weather treats. One thing led to another and home made cream puffs came to mind. It’s kind of funny because I haven’t had cream puffs in forever and the idea just kind of came to life.

So today we are going to make home made Chocolate Almond Cream Cheese Puffs. When’s the last time you had a home made cream puff? Enjoy!

For this recipe, I started off with Midwest Living’s Chocolate Hazelnut Cream Cheese Puffs Recipe. However, I had a few changes in mind, so that’s what I did.

Please do not let the idea of making home made cream puffs intimidate you!

They really aren’t all that complicated. The biggest thing to remember with cream puffs is to take your time. :)

This is exactly how you want your cream puff shells to look. They should be light and airy, golden brown, and of course never overbaked.

I used chocolate almond spread, but you could easily use Nutella. The original recipe was made with Nutella, I just wanted something a little different.

You can go as heavy or light with the chocolate drizzle as you want to. Of course it will depend on how the Chocolate Almond Cream Cheese Puffs are being served and personal preference. Enjoy!

 

Chocolate Almond Cream Cheese Puffs

Prep time: 40 min | Cool time: 10 min | Bake 30 to 40 min

Ingredients:                                        318_chocolate almond cream cheese puffs

1 cup water

1/2 cup butter, cut into eight pieces

1 cup all-purpose flour

4 large eggs

1 (8 ounce) package cream cheese, softened

2/3 cup Hershey’s Chocolate with Almond Spread, divided

1 (8 ounce) carton extra creamy frozen whipped topping, thawed

Directions:

1. Heat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicon baking mat, set aside.

2. For cream puff shells: In a medium saucepan combine the water, butter, and salt. Bring to boiling. Immediately add flour all at once; stir until well combined. Cook and stir until mixture forms a ball. Remove from heat. Cool for 10 minutes. Add eggs, one at a time, beating well after each with a hand-held mixer.

3. Drop 12 heaping tablespoons of dough onto prepared baking sheet. Bake for 30 to 40 minutes or until golden brown and firm. Do not overbake! After cream puff shells have cooled a bit, prick puffs with a sharp knife to allow steam to escape. Transfer to a wire rack; let cool completely.

4. For filling: In a medium bowl, combine the cream cheese and 1/2 cup of the chocolate with almond spread. Beat with an electric mixer on medium speed until well combined. Fold in the whipped topping until combined. Cover and chill until serving. Mixture will set up a bit.

5. Just before serving, cut tops from puffs; remove soft dough from inside puffs. Spoon about 1/3 cup filling into bottom half of puff. Replace top half.

6. Place the remaining few tablespoons of chocolate with almond spread in a small microwave-safe bowl. Microwave on high power for 20-25 seconds or until softened, stirring a few times. Using a spoon, drizzle chocolate spread over puffs. Sprinkle with sliced almonds, if desired. Serve immediately; refrigerate leftovers.

Makes 12 Servings

Of course we have our favorite versions, but I’m always open to trying a new banana bread recipe! Banana bread is just a great way to start your day, but it’s also a great snack, or even dessert.
