How can you beat the combination of chocolate chip and peanut butter cookie dough rolled into one? These Chocolate Chip Peanut Butter Bars are the kind of bar you can make ANY day of the week. Don’t you just love that?

I used homemade cookie dough for these bars only because I prefer the taste, however you can use homemade cookie dough or refrigerated cookie dough. The bars will turn out great either way!

It’s always nice to have a few easy to whip together recipes you can count when you are pressed for time. This is one of those recipes.

These cookies may look a little out of season but I guarantee you I was thinking SPRING all the way! I was so happy to see the sun the other day I got kind of caught up in the yellows and oranges that you see with a nice sunny sky! :)

So hopefully that explains the yellow and orange. Use any color of nonpareils (the little ball sprinkles) you like. Use whatever color makes you happy!

The flavor of the honey peanut butter really adds a nice touch to the cookies. Think of the cookies as being honey kissed. There’s just enough wonderful honey flavor to make these cookies extra tasty and extra special for Spring!

My Rice Krispie Bon Bons are the perfect sweet treat to enjoy for any occasion! Vanilla and chocolate yumminess!


There are just times you just want to go back to the classic treats…and today was one of those days. Putting together a twist on this classic treat was so much fun! The boys were absolutely thrilled when they saw I was doing something new with kripsie treats! Kids are so funny sometimes.

Not only are these fun treats super delicious, they are also pretty easy to put together.

If you want to serve something a little different to your family and friends after a great meal, these bon bons are the ticket! Besides it’s not too often when all the work is done ahead of time and there’s no real clean up when dessert is actually served! Don’t you just love that? :)

A line up of the major ingredients used. Just like to share what I use with you – first the white chocolate is Choceur brand and it comes from Germany. Don’t be fooled, I buy it at ALDI. I use it often because I love the flavor! That’s it, end of statement. :)

Next up we have Frosted Rice Krispies and Vanilla & Chocolate Swirl Marshmallows. For the final touch I used chocolate jimmies and pearl jimmies. Whether you use these products is up to you!


This is what the bons bons look like undressed, or before you coat them in chocolate. If you’re looking for a bright white chocolate feel free to use candy melts. They always work well.

Rice Krsipe Bon Bons


6 cups Frosted Rice Krispies, or your favorite rice krispies

1 – 8 ounce bag Vanilla & Chocolate Marshmallows, or any marshmallows you prefer

4 tablespoons butter

12 ounces Milk Chocolate Candy Melts

12 ounces White Chocolate melts, or 7.05 ounce bar Choceur White Chocolate (not quite as much as the candy melts, just use until gone)

Pearl/white jimmies


1. Line two cookie sheets with wax paper or parchment paper. Meausew out rice krispies and place in a large bowl; set aside.

2. Melt the butter and marshmallows in large saucepan over LOW, stirring occasionally. Remove pan from heat; stir in rice krsipies.

3. Stir until well coated using a rubber spatula or large spoon sprayed with cooking spray. Once the mixture has cooled a bit, start scooping balls with a small cookie scoop or regular spoon. When rolling the balls in your hands be sure to press the balls together just a bit to form a tight ball. The balls should be about 1-inch on diameter. Place rice krispie balls on cookie sheets lined with wax paper. Allow balls to sit until cooled.

4. Melt chocolate melts according to package directions. Using your fingers or with a spoon, or even toothpicks, dunk the rice krispie balls into one of the melted chocolates. Working with 3 or 4 at a time seems to work best.

Place the balls you’re working with on one of the wax paper lined cookie sheets. Immediately top with sprinkles. Allow the ball to set up until chocolate is firm and bon bons can easily be moved. If you want to place them in the fridge for a few minutes that’s fine. Just be sure to take them out again. Serve at room temperature.

For the first time ever I made Dipped Vanilla Wafer Cookies! Everyone and their brother has made these things other than me, until now. So I thought I would give it a whirl. You guys know I always tell you truth so here it goes. I really wasn’t expecting much.

People dunk these wafers in all kinds of good stuff and I always just kind of thought…whatevs. You know?

After the chocolate dried I decided I had to finally try one. Then I tried another one. They were SO good! I kid you not, I think I ate about 10 or 12 of these things! The flavors are simple yet delicious and keep you coming back for more!

My kids had the same kind of so, so reaction at first then it happened. I knew they loved them when they started fighting over who was eating more cookies! If you have kids you know that means – YES!!

So friends I share with you today my version of Dipped Vanilla Wafer Cookies! Enjoy!


FYI – I didn’t use the brand everyone has heard of, I used Market Pantry brand Vanilla Wafer Cookies. Use whatever brand you want to. I’m just letting you know what I used.

Lucky Mint Chocolate Pie


My Lucky Mint Chocolate Pie is simple, delicious and perfect for any occasion. Whether it’s St. Patrick’s Day or not, it’s always a great day to make this pie!


St. Patrick’s Day is just a few days away so I wanted to give you guys a simple yet tasty dessert you can make for the occasion, if you want to. It seems like there are a lot of people out there who really go all out for St. Patrick’s Day. So here you go!

Why is this Lucky Mint Chocolate Pie? Because once people taste it you will be lucky to get a piece! People of all ages love this pie!

The flavors and ingredients are so simple and yet so incredibly scrumptious together you will be amazed.

So here you have my Lucky Mint Chocolate Chip Pie that is wonderful for any occasion! Happy St. Patrick’s Day!


Love that the pie has a wonderful and delicious chocolate base. You can keep it in the freezer (the way I like it), or you can keep it in the fridge. Don’t worry, this pie does not freeze rock hard because it has a chocolate cream base.


In case you’re not sure, the chopped cookies are Girl Scout Thin Mints. Sorry I don’t have a box for you. I was lucky to get my hands on any, the boys went through them so fast!!

If you can’t find these marshmallows, no big deal. Regular marshmallows will work just fine. These marshmallows are fun when they’re half price, like mine were.

Seriously they have a faint chocolate mint flavor so you’re not really missing out on anything. You will still be getting the mint chocolate flavor from the Thin Mint Cookies and the Andes crème de menthe baking pieces.


There’s a lot of flexibility with this pie! It makes things SO easy! You don’t need to drag a fork through the whip cream, unless you want to. I did it strictly to give the appearance of texture. Either way the pie is going to be delicious. :)


Then of course you finish off the pie with chopped Thin Mint cookies (or Cool Mint Oreos) and the rest of the chopped Andes mint baking chips. The combination of the two is minty and chocolaty and so very WONDERFUL without being too much!

Chocolate and mint how can you go wrong?


Lucky Mint Chocolate Pie

Ingredients:                                                                                              2015-03-14-4931

1/2 cup whole milk, or any other milk

24 chocolate mint marshmallows, or regular marshmallows

1 cup Andes crème de menthe baking chips, divided

8 Thin Mint Girl Scout Cookies or Cool Mint Oreos, chopped

1 – 8 ounce container frozen whipped topping. thawed and divided

9 – inch pie crust, baked


1. Heat milk and marshmallows on LOW, or in a double boiler until marshmallows melt; stir in Andes baking chips until melted completely.

2. Remove from heat; cool. Add one cup whipped topping; stir and pour into baked pie crust.

3. Refrigerate overnight to set. Spread with remaining whipped topping, sprinkle top with remaining 1/4 cup of Andes and chopped thin mint cookies. Slice, serve and ENJOY!

Makes 8 servings.

The funny thing about this Mint Oreo Truffle is people will try one, and then one more, and one more…then pretty soon they will be gone as fast as you put them out!

Today I share with you my Mint Oreo Truffles, perfect for St. Patrick’s Day or anytime you want the great taste of chocolate and mint together!


These truffles are a great treat during the colder months because I think they just plain old taste better when it’s cold out.

Not only that, have you ever watched a child hold a chocolate anything during the warmer months? Um yeah, not a pretty sight. It’s kind of a meltdown in slow motion as they get frustrated and the chocolate goes everywhere! :)

They’re kind of fun to work with because it’s an easy way to get two flavors a the same time.

You guys…these donut holes are crazy delicious and they are baked not fried, so nothing to feel guilty about right? Lol!

These donut holes really are so easy to prepare! Don’t worry about needing a donut hole pan, just make them in a mini muffin pan.

Truth be told, the only reason I used a donut hole pan is because I got a couple as a gift last year. These donut holes are so easy to make in a regular mini muffin pan, that’s how I usually do it at home. Today I just felt like changing it up a bit.


The center of these donut holes is moist, dense and wonderful! If you look close enough you can almost see the mini chocolate chips baked into the donut hole.
