Mini Chocolate Caramel Bundt Cakes


These Mini Chocolate Caramel Bundt Cakes are the perfect special chocolatey treat to share with family and friends. With chocolate, caramel and cake what’s not to love? :)


There are so many double, triple, and quadruple chocolate cake recipes out there it’s kind of crazy. This recipe is my jazzed up version of one of those generic recipes we’ve seen everywhere.

What I like most about this recipe is you can include so many different flavors and it would still be fantastic!

These Mini Chocolate Caramel Bundt Cakes are a dessert anyone would love to have. Sometimes simple flavors are the best flavors.

Let’s be honest, when chocolate, caramel and cake are included in a dessert it’s usually pretty darn good!


Oh yes, you must let the chocolate and caramel drip down! Just be sure your cakes are cool when you start.


Then top with miniature chocolate chips. Because mini chocolate chips are always better than regular size chips.


Oh my, a ribbon of caramel ribbon dripping down? Don’t you just love that? 


Mini Chocolate Caramel Bundt Cakes

Ingredients:                                            2015-08-14-6377

1 package (regular size) Devil’s food Cake Mix

1 package (3.4 0z.) instant chocolate pudding

1 1/4 cups miniature chocolate chips, divided

1/4 cup Hot Fudge Sauce

1/2 cup Caramel Sauce, or Salted Caramel Sauce


1. Preheated oven to 350 degrees F. Spray mini bundt pans or a 13 x 9 pan with cooking spray.  

2. Prepare pudding mix with milk as directed on package. Blend dry cake mix into pudding mixture. Mixture will be thick and spongy, this is what you want. Stir in 3/4 cup miniature chocolate chips. Pour into greased mini bundt pans, bake for 15-18 minutes. Or, pour into 13 x 9 pan and bake for 30-35 minutes.

3. Cool mini bundts on wire rack for 5 minutes, then gently flip cakes out of pan. Continue cooling cakes on wire rack until completely cooled. If using 13 x 9 pan, leave cake in pan and allow to cool completely on wire rack.

4. Warm hot fudge sauce, drizzle over mini bundts or regular size cake. Drizzle caramel sauce over cake or mini bundts. Sprinkle with remaining miniature chocolate chips.

*Don’t let not having mini bundt pans keep you from making this dessert! Your cake will be delicious using any pan you have. Baking time may need to be adjusted.

Salted Caramel Ice Cream Sandwich Cake


This Salted Caramel Ice Cream Sandwich Cake is the perfect delicious go-to treat to keep nice and cool this summer!


In my last post I mentioned that it’s always great fun to create delicious cool recipes for summer, and it is. I love, love, love love making FUN summertime desserts!

This ice cream sandwich cake is so much fun to prepare and whole family loves it. The best part is you can prepare this ahead of time, pop it in the freezer, and sit back and watch the smiles when you are ready to serve!

This recipe comes together quite quickly because there are only 5 ingredients. Don’t you just love good 5 Ingredient recipes in the summer? Who wants to be stuck in the kitchen cooking when it’s beautiful out?

After all we’re all SO busy with summer activities! I say keep it yummy – but keep it simple!

Hope you enjoy this Salted Caramel Ice Cream Sandwich Cake.


The ingredients couldn’t be easier! I started with Kemp’s Salted Caramel Ice Cream Sandwiches, Creamy Cool Whip, Hot Fudge Sauce, Salted Caramel Sauce and of course Chewy Caramel Tim Tams. Feel free to substitute any ingredients you want to.


The chopped cookies on top of the hot fudge and salted caramel are chopped up Chewy Caramel Tim Tams. I talked about Tim Tams a bit in my last post. These cookies are wonderful!

I bought mine at Target, but I’m sure they must be available in other stores as well.


So the first layer is made of four ice cream sandwiches laid out so they are touching, then a layer of thawed whipped topping is spread over that.

For the hot fudge and salted caramel sauce, heat them up in separate bowls only until they’re warm enough to drizzle. You don’t want the sauces hot! You want them only warm enough to drizzle/work with.

Keep repeating layers until all twelve ice cream sandwiches are used up.


Look at all those luscious layers! This sweet treat is however surprisingly light!

No your cake won’t lean like mine. I had freezer helpers, my boys. :)


Salted Caramel Ice Cream Sandwich Cake

Ingredients:                                                        2015-07-29-6678

1 box (12 count) Salted Caramel Ice Cream Sandwiches

Whipped topping, thawed

1/2 Salted Caramel Sauce, heated up enough to drizzle

1/3 Hot Fudge Sauce, heated up enough to drizzle

4-6 Chewy Caramel Tim Tams, chopped


1. Place four ice cream sandwiches on a platter. Make sure the ice cream sandwiches are touching. Spread approximately 1/3 of the whipped topping over the ice cream sandwiches. Drizzle with 1/3 of the salted caramel sauce and 1/3 of the hot fudge sauce. Repeat layering two more times, for a total of three layers.

2. Chop the cookies to your desired consistency. Sprinkle top layer with chopped Tim Tams. Some like bigger chunks, some like smaller chunks, do what makes you happy!

3. Cover and freeze. Ice cream sandwich cake freezes very nicely. Be sure to keep it flat. Remove from freezer 10 minutes before serving. Cut into slices and serve.

Makes 8-12 Servings

Cookies & Cream Cake Mix Brownie Bars


My Cookies & Cream Cake Mix Brownie Bars are the perfect chocolate treat for any occasion! Cookies & cream and chocolate together are always a tasty combination! :)


Like a lot of people my guys love brownies! So I frequently make brownies for them. Today I wanted to try something new. For years I’ve read that you can use a cake mix to make brownies. I have always been very curious how they would turn out. So today, I finally decided to give it a try.

In my humble opinion I prefer to call this version a brownie bar. Why? Because the texture on these brownie bars is both brownie-like and cake-like at the same time.

You know brownie recipes often state for a fudgy brownie add this and for a more cake-like brownie add that? These wonderful treats lie somewhere in the middle so I call them brownie bars.

That said, I can honestly say these brownie bars are very good! With the Oreo cookies and the glaze happening with these sweet delights a super fudgy brownie would’ve just been too much. They are perfect the way they are! :)

These cake mix brownies bars are pretty easy to make and they are surprisingly good!


Then came time to present these to my food critics (a.k.a. my fellas) and let me tell you they are a tough crowd! Don’t think they go easy on me because they’re my boys and husband, quite the opposite!

They were too busy shoving the brownie bars down their throats to come up with anything negative, which tells me I did my job! My oldest son takes brownies very seriously and if anything is off, he will let me know! No, I’m not kidding!!!

The Oreo cookies that go in the brownie bars are chopped/crushed just like you would expect. The Oreo cookies that are sprinkled on top are coarsely chopped. I love that! The coarsely chopped cookies on top add some nice texture to the bars.

I used Heads or Tails Double Stuf Oreo Cookies because my kids LOVE them! Feel free to substitute any cream-filled sandwich cookie you like.    2015-06-23-6135

Don’t forget the glaze on these brownie bars. It really adds a yummy touch, plus it helps the chopped cookies stay in place better.


Cookies & Cream Cake Mix Brownie Bars

Ingredients:                                                          2015-06-23-6160

1 Regular size Devil’s Food cake mix

1/3 cup sunflower oil, canola oil, or vegetable oil

1/3 cup milk

1 large egg

8 Heads or Tails Double Stuf Oreo cookies chopped/crushed, or any cream-filled sandwich cookie you prefer

1 cup powdered sugar

1/2 teaspoon vanilla

1-2 tablespoons milk

4 Heads or Tails Double Stuf Oreo cookies, coarsely chopped, or any cream-filled sandwich cookie you prefer


1. Preheat oven to 350 degrees F. Spray a 9 x 9 baking pan with cooking spray, or line with parchment paper. Set aside.

2. In a mixing bowl mix cake mix, oil, milk and egg with a heavy spoon until combined. Stir in chopped/crushed Oreo cookies.

3. Spread mixture into baking pan. Bake for 30-35 minutes or until toothpick comes out clean when inserted. Cool completely.

4. Whisk together powdered sugar, milk, and vanilla until desired consistency is reached. Drizzle glaze over brownie bars. Sprinkle with the coarsely chopped cookies. Allow to set completely and cut into bars.

Makes 12 servings

When I think of 4th of July food, or Independence Day picnics, I  think of classic American favorites done well! Are you guys with me so far?

For example, it’s never just a burger on the 4th of July, it’s a burger with all the fixings!

No one goes to the store to pick up just any old watermelon. We all want a big juicy sweet watermelon to enjoy! Preferably ice cold, right?

The same is true of dessert on The Fourth of July. Dessert needs to be a really good – any old dessert will not due on the 4th of July!

For the upcoming holiday I have taken a classic American cookie and jazzed it up just for The Fourth of July! :)

As a general rule of thumb, I like to dip about 2/3 of the cookies in milk chocolate, semisweet chocolate or dark chocolate and about 1/3 of the cookies in white chocolate.

Peanut Butter Cup Rice Krispie Treats

Oh my gosh you guys! These Peanut Butter Cup Rice Krispie Treats are going to knock your socks off!

Don’t get me wrong rice krispie treats are always tasty. However, every time I make rice krispie treats it’s time to play! To me rice krispie treats are like a blank canvas, the possibilities are endless!

The end of school was really getting to be a grind, so I decided to put a smile on everyone’s face and make these Peanut Butter Cup Rice Krispie Treats. School just ended around here. :)


So let’s discuss – marshmallow, butter, krispie cereal, peanut butter, chopped candy, chocolate and of course sprinkles! All I can say is – count me in! You don’t have to ask me twice.

As for the boys, they couldn’t eat these treats fast enough, and thenthey had to divvy up the leftovers to share with their friends! So funny!

If you haven’t tried a good over-the-top rice krispie treat before, you have got to try these!


Don’t worry about having egg shaped candy! I used candy eggs I had in the freezer only because I got them for next to nothing after Easter. Regular peanut butter cups or fun size candy bars will work just fine!


Of course these treats needed a milk chocolate topping and confetti sprinkles on top! Don’t all treats?


Why confetti sprinkles? Because they’re fun and happy! Of course, feel free to use whatever sprinkles make you happy. :)


Peanut Butter Cup Rice Krispie Treats

Ingredients:                                                    2015-05-15-5871

4 cups mini marshmallows

3 tablespoons butter

6 cups Rice Krispie cereal, or any brand of puffed rice cereal

1/2 cup creamy peanut butter

15 Easter shaped peanut butter eggs chopped , or 18-24 regular peanut butter cups, or fun size candy bars

(Reese’s peanut butter eggs, Snickers eggs, and Snickers peanut butter eggs were used)

2 cups milk chocolate chips or your favorite good quality milk chocolate

1 tablespoon butter flavored shortening or regular shortening

Confetti sprinkles, or any kind you prefer


1. Spray a 9×13-inch pan with cooking spray. Set aside.

2. In a large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in peanut butter.

3. Add the cereal to the mixture and stir until well coated. Press half of the cereal mixture into sprayed 9×13-inch pan. Place the chopped candy on top of the cereal mixture. It will seem like a lot of candy, but it ends up being the perfect amount. Press the remaining cereal mixture over the of the candy. Allow to cool completely.

4. In a microwave safe bowl, microwave the chocolate chips and shortening. Microwave for 30 seconds at a time. Stir after each 30 second interval. Continue heating 30 seconds at a time until chocolate is melted and smooth. Spread chocolate evenly over the rice krispie treats. Garnish with confetti sprinkles, or any sprinkles you prefer. Once chocolate is set completely, cut and serve.

Makes 16-20 Servings

Cupcakes just seem to be one of those things everyone loves! Really, how can you go wrong with a cupcake? According to my boys, the only thing better than a cupcake is a cupcake with sprinkles! So chocolate cupcakes with sprinkles it is – I hope you agree!

You guys know I am not opposed to using a cake mix to save time when baking. But today I wanted to make a homemade cupcake! That urge doesn’t hit too often so I went with it and I’m glad I did! :)

There’s nothing like the taste of a homemade chocolate cupcake! So incredible yummy!

The chocolate ganache will dry for you no problem! I decided to photograph while they were still drying because sometimes it’s nice to see something other than regular frosting on a cupcake. Or maybe that’s just the blogger in me…not sure! :)

Today I share with you my Simple Chocolate Ganache Cupcakes..enjoy!


Hope you guys like chocolate ganache! Honestly, chocolate ganache is without a doubt one of my absolute favorites! If you don’t like ganache you can always use regular frosting.


The batter for these cupcakes is a little thicker batter than you may be used to, but that’s the way you want it. Don’t forget to put a little water in your empty muffin cups, it helps the cupcakes bake better. Please trust me on this!


The cupcakes will crack just a bit on top to let the hot air escape, that’s perfectly natural!


Dip the top of each cupcake into the ganache. Place on a wire rack to set. Whether you use sprinkles or not is up to you. :)



Simple Chocolate Ganache Cupcakes

Ingredients:                                             2015-06-03-5809 Simple Chocolate Ganache Cupcakes

1 cup (2 sticks) unsalted butter, softened

1 cup sugar

4 large eggs

2 cups all-purpose flour

3 teaspoons baking powder

1/2 teaspoon salt

4-6 tablespoons cocoa powder (4 tablespoons were used for these cupcakes)

1 teaspoon vanilla

1 (6 oz.) container vanilla or plain yogurt

2 tablespoons milk

Chocolate Ganache

2 cups (12 ounces) milk chocolate chips, or other good milk chocolate

1/2 cup heavy whipping cream


1. Preheat oven to 350 degrees F. Line 18 muffin cups with paper liners.

2. In a large bowl combine all the cupcake ingredients and beat with an electric mixer until smooth and well combined, about 2 to 3 minutes. Batter will be thick. Spoon or scoop the batter into the cups. Bale for 20 minutes. Remove pans from oven and cool for 5 minutes. Remove cupcakes and cool on a wire rack.

3. Place chocolate chips and heavy cream in a small bowl. Heat in microwave until smooth and melted, stirring every 20 seconds. It should take about 1 minute total. Or, in a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Dip the top of each cupcake into ganache; place on wire rack to set, decorate with sprinkles if desired.

Store in an airtight container in the refrigerator. Let stand at room temperature before serving.

Makes 18 Servings
