Cookie Dough Chocolate Bark


My Cookie Dough Chocolate Bark makes a great chocolatey snack, wonderful dessert, or even a fun gift! Chocolate and cookie dough…always delicious! 2016-04-08-7875 My fellas LOVE chocolate chip cookie anything, most people do right? This chocolate bark is made with delicious dark chocolate & wonderful cookie dough.

I can’t tell you how excited my guys were to try this bark. They absolutely loved it!! What’s not to love? Of course this recipe is made with an eggless cookie dough so it’s safe for all to enjoy!


I used Trader Joe’s Dark Chocolate because the taste is wonderful. But feel free to use any kind of chocolate melting wafer you like.


Melt your chocolate and pour it onto a regular size cookie sheet lined with parchment paper. Be sure to spread it evenly so it’s about the same thickness all the way through.

Drop little pieces of cookie dough onto the melted chocolate pressing the cookie dough into the chocolate just a bit. You can also add a few sprinkles if you want to.

If you are going to drizzle a little white chocolate over the entire thing be sure to wait until the cookie dough bark has set up and is nice and firm. Immediately add a few more sprinkles if you are doing so.


Cut or break the Cookie Dough Chocolate Bark into pieces. Some people like to cut their bark a certain way, some like to break it up into pieces that are different shapes and sizes.

Break it, cut it, do whatever works for you. This bark is going to be delicious!

Peanut Butter Chocolate Chip Zucchini Bread

Do you need to peel your zucchini? The answer is NO!

Can I tell you guys a little secret? I never used to like zucchini! Totally true! But then I started to play around with it and I’ve found zucchini is a wonderful ingredient!


Zucchini adds a lot of moisture to anything you make, AND you can give it just about any flavor you want to.

Apples are my first love, zucchini is my second!


See the hints of green? Yes my friends, extra moisture…shredded zucchini!

Don’t forget you have the yummy flavors of peanut butter and chocolate chips going on too!


Peanut Butter Chocolate Chip  Zucchini Bread

Ingredients:                   2015-08-10-6731

1 stick unsalted butter, softened

1/2 cup granulated sugar

1/2 cup whole milk

1 large egg

1 teaspoon pure vanilla extract

1/2 cup creamy peanut butter

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon kosher salt, or sea salt

1 1/2 cups shredded zucchini

1/2 cup miniature chocolate chips (reserve 2 tablespoons)


1. Preheat oven to 350 degrees F. Spray 3-4 foil mini loaf pans with cooking spray.

2. Place butter and sugar into a large bowl, cream until well combined. Mix in milk, egg, vanilla and peanut butter until just combined. Slowly add flour, baking soda, baking powder, salt. Add mini chocolate chips and zucchini, stir until just combined.

3. Fill mini loaf pans with batter 3/4 full. Sprinkle with remaining 2 tablespoons of chocolate chips. Bake for 37-40 minutes, until baked through. Remove and let cool on wire rack.

Makes 3-4 Mini Loaves

Chocolate Chip Dip


This creamy Chocolate Chip Dip is the perfect crowd pleasing dessert or snack and puts a smile on everyone’s face!


Okay I admit it, I don’t do a lot of snacks or dips. Being that I’m not a big snacker I just don’t do them that often. But it has been brought to my attention that I should share some of “my good dips” with you guys. So funny. :)

But I do have quite a few dips and snacks that I make for family get-togethers and such. We all have our favorites, right?

This dip is sweet and creamy and fun to share with family and friends.

When you think Chocolate Chip Dip, think yummy and creamy with plenty of mini chocolate chips. This recipe is one of those simple dips you can whip up whenever you want to serve a crowd pleaser.

We really like cinnamon pita chips with this chocolate chip dip. Apple slices are a close second, and graham cracker sticks are also very good.

Feel free to use whatever you like best!

Reserve some of the miniature chocolate chips to sprinkle over the dip. Just a nice little finishing touch. :)


Chocolate Chip Dip

Ingredients:                                                                                                               2015-07-17-6452

1 package (8 ounces) Neufchatel (reduced fat) cream cheese, softened (regular cream cheese also works fine)

1/2 cup (1 stick) unsalted butter, softened

3/4 cup powdered sugar

2 tablespoons brown sugar

1 1/2 teaspoons vanilla

3/4 cup miniature semisweet chocolate chips

Cinnamon pita chips, apple slices, graham cracker sticks – use whatever your favorite is for dipping


In a medium bowl beat cream cheese and butter until light and fluffy. Add the sugars and vanilla; beat until smooth. Stir in chocolate chips by hand. Serve with cinnamon pita chips, apple slices or graham crackers.

Makes 16 servings

As a general rule of thumb, I like to dip about 2/3 of the cookies in milk chocolate, semisweet chocolate or dark chocolate and about 1/3 of the cookies in white chocolate.

My Dark Chocolate Stuffed Chocolate Chip Cookies are the perfect cookie when you really need a good chocolate chip cookie! Everyone will love these!


I have probably told you guys about a million times my guys love, love, love chocolate chip cookies? Well that’s still true!

When I first stuffed these cookies with a sea salt caramel dark chocolate I wasn’t sure how they would turn out. I will spare you the hundreds of thoughts that ran my mind as a food blogger.

But I’m happy to report these cookies are REALLY good! Let me put it to you this way. The day I made these Dark Chocolate Stuffed Chocolate Chip Cookies I had to rush off to a meeting and was gone for a few hours. When I returned home almost all the cookies were gone!

Sure on my way out I told the boys they could have a few for snack and to put the rest away for later. So how could so many cookies be gone?

Each of my guys had a different story about what happened and nobody was talking! So either something really weird happened (yes that has been known to happen around here) or my guys were able to put away about 18-20 cookies in a matter of a few hours. You decide! :)

Happy Friday everyone! Since Valentine’s Day is tomorrow I wanted to give you all a cookie that’s my kind of cookie! There are a lot of cookie lovers out there and I’m one of them! You just can’t beat a good cookie. :)

Don’t get me wrong, other desserts are good for the right occasion, but cookies always make the day seem a little brighter. I know my boys sure think so!

I hope you guys like enjoy this variation of one of my favorite cookie recipes. Of course I made a few changes and came up with this recipe that has me in my happy place again. Today I share with you my M&M Chocolate Chip Cookies for Valentine’s Day.



The first thing my oldest asked me is what are the red things? No, they’re not red hots. The red things are mini M&M’s.

You know the red & green mini M&M’s they sell at during the Christmas Season? I try to buy several bags of those after Christmas when they’re clearanced. I separate the red and green M&M’s by color and freeze them. Then I use the red ones for Valentine’s and anything I want, and the green get used for St. Patrick’s Day and anything else I want.

Easy, easy, easy!


So we’re using red mini M&M’s and I also like to use miniature chocolate chips for these cookies. I also added 2-3 tablespoons of Valentine’s sprinkles, just because they’re fun. But you can do whatever you want to. :)


As you can see, I have Valentine’s Day in parenthesis. Although I made these cookies for Valentine’s Day, you could easily make these cookies for any holiday or special occasion. Simply change the colors any way you want to.


M&M Chocolate Chip Cookies (for Valentine’s Day)

Ingredients:                                                                                        2015-02-12-4565 M&M Choc Chip Cookies for VD

1/2 cup (1 stick) butter, preferably unsalted

1/2 cup brown sugar, packed

1/2 cup white sugar

1 large egg

1/2 teaspoon vanilla

1 1/2 cups flour

2 tablespoons vanilla instant pudding mix

1 teaspoon baking soda

1/2 teaspoon salt (if using unsalted butter)

1 cup mini M&M’s

3/4 cup mini chocolate chips

2-3 tablespoons Valentine’s sprinkles, optional


1. Preheat oven to 350F degrees. Line two cookie sheets with baking mats or parchment paper. Set aside.

2. Mix together the butter, brown sugar and sugar until light and fluffy. Add in the egg and vanilla. Continue mixing until incorporated. Using a mixer or by hand, slowly add the flour, pudding mix, baking soda and salt. Mix until combined. Stir in mini chocolate chips, mini M&M’s and sprinkles. Stir until ingredients are evenly distributed through dough.

3. Use a cookie scoop to scoop dough onto prepared cookie sheets placing about 1 inch apart. Bake for about 10-12 minutes. Bake until cookies are golden at edges. Cool on cookie sheets for 5 minutes. Transfer to wire rack to cool completely.

Makes 24 Cookies

So, I was at the Betty Crocker site a few days ago and I saw a version of these cookies. My kids just happened to be there and saw it too.

Normally I pretty much never do an adaptation of something I just saw; especially something I just saw recently. Good or bad I like to do my own thing. These cookies are however the exception, only because chocolate chip is my family’s favorite cookie!

Here’s a brief rundown of the conversation we had right after checking out the cookie. :)

the boys: WHAT, you can make chocolate chip cookies for Christmas? That’s a Christmas Cookie?

me: Of course guys, it’s really nothing new, just a fun modern twist.

the boys: Hey! You knew about this (like it’s a GIANT secret) and didn’t tell us?

me: Well I didn’t think there was anything to say (as I was thinking..duh). It’s just a chocolate chip cookie dipped in chocolate…

the boys: Isn’t that the point? (seriously looking at me like I’m some kind of crazy woman missing the point).

me: What do you mean?

the boys: So Christmas Cookies can be cookies we L-O-V-E and would want to eat anytime of the year? Not just the ones we’re suppose to like because it’s Christmas?

me: Note to self – keep it simple, keep it good! I am SO doing Christmas cookies and treats that fit the way we live today!

Don’t let the idea of home made scones intimidate you, they are a cinch to make. When I was making these I was thinking of what would be delicious on a holiday weekend but doesn’t take too much time.

These scones are meant to be enjoyed with coffee, tea, hot chocolate, or whatever you like to drink in the morning. I wanted to make these scones regular size, but they could easily be done as mini scones. Just be sure to cut them before they go in the oven.

The cinnamon chips are so warm and inviting in these Cinnamon Chocolate Chip Scones AND the mini chocolate chips just make you happy. :)
