Celebration Butterfinger Chocolate Cake

This is the cake I made for my boys recently to celebrate a few good things happening at school…let’s just say we really liked this cake! 2015-09-26-7245 Chocolate anyone? How about Butterfingers? Or better yet how about both? 🙂

I would like to introduce you to my Celebration Butterfinger Chocolate Cake? It’s a double layer cake which I don’t do too often, but today’s the day!

The boys have some fun things going on and to celebrate I thought this cake would be lots of fun and it was! This cake can be enjoyed to celebrate any fun occasion at all, something special at work, school, church, or any family celebration. Anything you want to celebrate will be even more more fun with my Celebration Butterfinger Chocolate Cake.

Spring Celebration Brownies

These Spring Celebration Brownies are delicious, layered with flavor and absolutely perfect for any spring get together!

2015-03-26-5046 Some days it’s so much fun to try new things in the kitchen…and today was one of them! Putting together this MMM was such a nice change of pace.

So we’ve all heard of chocolate chip cookie dough brownies, sometimes with Oreos and sometimes not, or even slutty brownies. Honestly, for a long time I didn’t know what a slutty brownie was! Because although I am a food blogger, brownies aren’t my favorite, and I didn’t really care. Finally I decided I really should check it out, so I did.

Naturally I had to make a pan of chocolate chip cookie and Oreo fudge brownies, or what they also affectionately call slutty brownies. They were good but very, very heavy! I knew right away I wanted something a little lighter, so I wouldn’t be full for the next 3 days.

Because these aren’t as heavy as the triple chocolate original they are perfect for a scoop of ice cream and your favorite sauce or sauces!

If you are looking to impress your guests at any spring soiree, this brownie is your ticket!

If I may, Happy Birthday to Megamommy! Did you know Megamommy is 2 years old this month? Yes it’s true, although I still can’t believe it! I am so thankful to all of you that read my blog and allow me to do what I love doing!

Two years ago I had NO idea what was ahead of me, or the amount of work it would take to get the blog where I want it to be. Still working on that one. What a truly wonderful experience it has been!

A few years of my Megamommy journey summed up quickly…

2012 Megamommy started in November after years of wanting to start my own blog. For several years I pondered the “perfect” way to do everything for the blog. After wasting a lot of time I realized I just had to start! Nothing was perfect, certainly not my pictures. But a person has to start somewhere, and so I did!

2013 I began to learn how to earned how balance the blog and all the other jobs I have in life. Some of my responsibilities include being a vendor at our local farmers’ market, helping at our family-operated apple orchard, baking for the farmers’ market each week, working, being a mom, being a wife, and the list goes on. Like so many of you, I wear many different hats.

2014 has been an incredibly busy year! I have grown and changed as a blogger. As always I am thankful to each and every single one of you that stops to take a look at my little corner of the world. Much more to come, I promise!

Yes, I am a messy baker. As you can see I have wax paper over my cutting board to help with the mess. You will want to be sure to line your cookie sheets with wax paper or baking mats.

Naked truffles here, make sure your cookie dough is shaped into nice balls. It makes the whole process much easier!

Hope you enjoy my Celebration Cookie Dough Truffles to celebrate!

Celebration Cookie Dough Truffles

Ingredients:                                                         2014-11-18_3707

1/2 cup butter, softened

3/4 cup brown sugar, packed

1 teaspoon vanilla

2 tablespoons milk, or chocolate chip cookie dough coffee creamer

1 1/4 cups all-purpose flour

1/2 miniature chocolate chips

12 oz. milk chocolate chips or chocolate candy melts, for dipping

Rainbow sprinkles, if desired

Directions:

1. In a large bowl using a stand or electric mixer, cream the butter and brown sugar until light and fluffy. Beat in milk and vanilla.  Gradually add flour mixing well. Stir in chocolate chips.

2. Shape into 1 1/2-inch balls; place on wax paper-lined cookie sheets or cookie sheets lined with silicone baking mats. Cover loosely and refrigerate for about 2 hours.

3. Melt chocolate chips or candy coating in microwave; stir until smooth. Remove a few balls from the fridge at a time and dip in melted chocolate. Allow excess chocolate to drip off. Place on cookie sheets lined with baking mats or wax paper-lined baking sheets. Sprinkle with rainbow colored sprinkles, or desired sprinkles. Refrigerate until firm, about 30 minutes. Store in the refrigerator.

Makes 24 truffles.

Crazy Good Confetti Cookies

My apologies everyone for not posting anything recently! I am truly very, very sorry!!

I was NOT on vacation or having fun. My computer crashed and it crashed hard! You know how you hear people say they lost everything? I SO get it now! It’s such a terrible, terrible feeling!!

After my computer crashed things just got worse from there. Instead of boring you with all of the details I will just say thank goodness my husband is an IT Professional and good at what he does, or I would not be posting right now!!
