Ah caramel apples, what a wonderful treat! Honestly, they are wonderful to make for family and friends, and giving them as a gift is even more fun!

There’s just something about a warm caramel apple dessert with ice cream melting on top that is VERY hard to resist, and don’t forget the caramel drizzle! Just a little bit of caramel drizzle makes this dessert wonderful!

This dessert is perfect as the apples start to ripen and those wonderful fall flavors are everywhere! But really this would be a good dessert any time of year.

There are so many double, triple, and quadruple chocolate cake recipes out there it’s kind of crazy. This recipe is my jazzed up version of one of those generic recipes we’ve seen everywhere.

What I like most about this recipe is you can include so many different flavors and it would still be fantastic!

These Mini Chocolate Caramel Bundt Cakes are a dessert anyone would love to have. Sometimes simple flavors are the best flavors.

Let’s be honest, when chocolate, caramel and cake are included in a dessert it’s usually pretty darn good!

Oh yes, you must let the chocolate and caramel drip down! Just be sure your cakes are cool when you start.

Then top with miniature chocolate chips. Because mini chocolate chips are always better than regular size chips.

Mini Chocolate Caramel Bundt Cakes

Ingredients:                                            2015-08-14-6377

1 package (regular size) Devil’s food Cake Mix

1 package (3.4 0z.) instant chocolate pudding

1 1/4 cups miniature chocolate chips, divided

1/4 cup Hot Fudge Sauce

1/2 cup Caramel Sauce, or Salted Caramel Sauce

Directions:

1. Preheated oven to 350 degrees F. Spray mini bundt pans or a 13 x 9 pan with cooking spray.  

2. Prepare pudding mix with milk as directed on package. Blend dry cake mix into pudding mixture. Mixture will be thick and spongy, this is what you want. Stir in 3/4 cup miniature chocolate chips. Pour into greased mini bundt pans, bake for 15-18 minutes. Or, pour into 13 x 9 pan and bake for 30-35 minutes.

3. Cool mini bundts on wire rack for 5 minutes, then gently flip cakes out of pan. Continue cooling cakes on wire rack until completely cooled. If using 13 x 9 pan, leave cake in pan and allow to cool completely on wire rack.

4. Warm hot fudge sauce, drizzle over mini bundts or regular size cake. Drizzle caramel sauce over cake or mini bundts. Sprinkle with remaining miniature chocolate chips.

*Don’t let not having mini bundt pans keep you from making this dessert! Your cake will be delicious using any pan you have. Baking time may need to be adjusted.

Sometimes I peel my apples, but sometimes I don’t. It just depends on what I’m making. Today I didn’t peel my apples. When making a regular size apple pie, I always peel my apples.

Moving on, be sure to always wash and dry your apples. But as far as peeling goes, that depends on your personal preference. There are a lot of vitamins and nutrients, not to mention fiber in the peel. Just saying...something to consider. :)

It sure feel good to be at the beginning of a new year, but I have to say the cold can make life challenging. Of course not everyone lives in a cold-weather state, but this Winter seems to keep sharing the cold! So a little warm comfort food seems to be in order here.

Today I prepared for you what I think is the perfect cold weather  dessert for you family and friends…my Skillet Baked Caramel Apple Dessert.

Being that it is Winter, and so much of the country is experiencing some really cold weather right now I wanted to develop a dessert that you can throw together in very little time. The kids love it served warm with a scoop of ice cream and delicious warm caramel sauce drizzled across the top. My Skillet Baked Caramel Apple Dessert is such a nice way to finish off the meal, especially on a cold night!

So excited to be celebrating ttoday! Today I am taking part in the Patience Brewster online cookie exchange! If you’re not familiar, she is an artist and designer of holiday figurines and unique ornaments. Can’t wait to see what everyone else made for the cookie exchange!

To celebrate, I made these Chocolate Caramel Surprise Cookies! A few days ago I made my Hot Cocoa Surprise Cookies, and had several of you email me and tell me how nice it is to have a new twist on a classic favorite.

I love these cookies because they’re a treat inside of a treat. A wonderful caramel chocolate center in a fresh buttery homemade cookie! What’s not to love?

I knew right away I wanted to do one more variation of these surprise sugar cookies for this cookie exchange!

Break out your basic pantry ingredients and a bag of candy and start baking, these cookies are sure to satisfy!

For this version of my surprise cookies I used Milky Way Simply Caramel fun size bars cut in half. They worked out beautifully! The soft caramel center with a hint of chocolate is such a treat…it’s like a little present inside the cookie!

Chocolate Caramel Surprise Cookies

Ingredients:                                                                                    2014-12-16 4003 Chocolate Caramel Surprise Cookies

1 cup unsalted butter, softened

1-1/2 cups powdered sugar

1 egg, room temperature

1 teaspoon vanilla

1/2 teaspoon almond extract

2-1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon cream of tartar

1/2 teaspoon salt

Milky Way Caramel  Simply Caramel Fun Size bars, cut in half

Red, green and white colored sprinkles

Directions:

1. Using a stand mixer or hand mixer, cream together your butter, powdered sugar, egg, vanilla and almond extract. Mix in flour, baking soda, salt, and cream of tartar. Cover; chill 2 to 3 hours.

2. Heat oven to 350 degrees F. Line two baking sheets with baking mats (silpat liners) or parchment paper. Scoop dough into even sized balls until dough is gone. Place a Simply Caramel candy in the middle of each ball and roll dough between your palms to cover the candy. Make sure chocolate isn’t showing anywhere.

3. Dab ball in colored sprinkles (you’ll need about 1/2 cup total) and place on prepared baking sheets, about 2 inches apart. Bake for 10-13 minutes. Let cool on baking sheets for 5 minutes before transferring to wire racks to cool completely. Store at room temp.

Makes 36 cookies.

My cookies today are a little fun and a little different. These cookies are super soft and almost pillowy. I admit I don’t do a lot of super soft cookies, but sometimes it’s fun to change things up a bit and that’s what we’re doing today.

The pumpkin in these cookies gives them a special softness, and of course a delicious flavor! Did I mention these wonderfully soft pumpkin cookies also have caramel and chocolate chips in them? Well they do!

You guys, these cookies are SO good when they’ve cooled just a bit and the caramel and chocolate chips are still warm and gooey!!

Let’s just say yummy is an understatement! :)

You can see the cookies are speckled with chocolate chips and caramel bits. The caramel melts right in and you have a great combo.

Now more often than not, I make my brownies from a box and simply adapt the flavors to be what I want that day. Today I wanted a chocolate caramel flavor that wasn’t too heavy, but still had lots of flavor. This is what I came up.

Well, I really think this cake does that! All of the flavors are just plain old HAPPY flavors!! This cake will definitely make the family, the people you live with, or anyone else happy tonight, for that matter. :)

I thought long and hard about what flavors and textures to include in this recipe. This particular combination of candy and cake includes some of just about everybody’s favorite flavors! Great cake, great frosting, delicious candy, and of course just the right amount of caramel.

After a lot of fun, and a lot of crazy weather this summer my boys go back to school on Wednesday. That’s right, this Wednesday, just a few more days. I think my version of Caramel Banana Bread is going to be a nice addition to our regular breakfast line-up.

If at all possible I try to make them some kind of banana bread or muffins once a week. I especially like banana bread because I always use lots of reals bananas and I usually slip a little yogurt in there too. Extra fruit + extra protein = kids who are ready for a great day!
