Your traditional petit four starts with a light white cake and is then transformed from there. White cake is great for certain things, but I guess I had chocolate on the brain today. So I decided to make brownie petit fours. Hey, why not?

Like a lot of people my guys love brownies! So I frequently make brownies for them. Today I wanted to try something new. For years I’ve read that you can use a cake mix to make brownies. I have always been very curious how they would turn out. So today, I finally decided to give it a try.

In my humble opinion I prefer to call this version a brownie bar. Why? Because the texture on these brownie bars is both brownie-like and cake-like at the same time.

You know brownie recipes often state for a fudgy brownie add this and for a more cake-like brownie add that? These wonderful treats lie somewhere in the middle so I call them brownie bars.

That said, I can honestly say these brownie bars are very good! With the Oreo cookies and the glaze happening with these sweet delights a super fudgy brownie would’ve just been too much. They are perfect the way they are! :)

These cake mix brownies bars are pretty easy to make and they are surprisingly good!

Then came time to present these to my food critics (a.k.a. my fellas) and let me tell you they are a tough crowd! Don’t think they go easy on me because they’re my boys and husband, quite the opposite!

They were too busy shoving the brownie bars down their throats to come up with anything negative, which tells me I did my job! My oldest son takes brownies very seriously and if anything is off, he will let me know! No, I’m not kidding!!!

The Oreo cookies that go in the brownie bars are chopped/crushed just like you would expect. The Oreo cookies that are sprinkled on top are coarsely chopped. I love that! The coarsely chopped cookies on top add some nice texture to the bars.

I used Heads or Tails Double Stuf Oreo Cookies because my kids LOVE them! Feel free to substitute any cream-filled sandwich cookie you like.    2015-06-23-6135

Don’t forget the glaze on these brownie bars. It really adds a yummy touch, plus it helps the chopped cookies stay in place better.

Cookies & Cream Cake Mix Brownie Bars

Ingredients:                                                          2015-06-23-6160

1 Regular size Devil’s Food cake mix

1/3 cup sunflower oil, canola oil, or vegetable oil

1/3 cup milk

1 large egg

8 Heads or Tails Double Stuf Oreo cookies chopped/crushed, or any cream-filled sandwich cookie you prefer

1 cup powdered sugar

1/2 teaspoon vanilla

1-2 tablespoons milk

4 Heads or Tails Double Stuf Oreo cookies, coarsely chopped, or any cream-filled sandwich cookie you prefer

Directions:

1. Preheat oven to 350 degrees F. Spray a 9 x 9 baking pan with cooking spray, or line with parchment paper. Set aside.

2. In a mixing bowl mix cake mix, oil, milk and egg with a heavy spoon until combined. Stir in chopped/crushed Oreo cookies.

3. Spread mixture into baking pan. Bake for 30-35 minutes or until toothpick comes out clean when inserted. Cool completely.

4. Whisk together powdered sugar, milk, and vanilla until desired consistency is reached. Drizzle glaze over brownie bars. Sprinkle with the coarsely chopped cookies. Allow to set completely and cut into bars.

Makes 12 servings

Combos of all kinds seem to be all the rage right now! The combinations being done in the food world are just so much fun! So I decided to put my own spin on some flavors that people usually love! The whole make it your own deal, you know?

With Valentine’s Day approaching soon I just had to make a few fun and slightly different combos of my own!

Did you catch my Red Velvet (Valentine’s) Brookies last week? I had so much fun with last week’s combo dessert I wanted to make another one with a really good frosting!

So, today I have made for you a Funfetti Red Velvet Brownie Sheet Cake with a blush buttercream frosting! Also, in the buttercream frosting I have a hint of cherry and almond to make the buttercream even more incredible!

I guarantee you this buttercream frosting is guaranteed to please! Or you can always use canned frosting if you prefer.

A couple on details first. Make sure you use a 15 x 10 x 1-inch pan that is 1-inch high to prevent overflow during baking. Spray pan generously with cooking spray.

First put together the Valentine’s Funfetti cake batter and pour it into the prepared pan. Then put together the Red Velvet brownie batter according to the instructions below. Pour that over the Funfettii batter. Swirl batters together with the tip of a knife, pulling some cake batter to the top surface.

While that is baking, make your buttercream frosting and set it aside. Take the cake out of the oven, let it cool completely. You can either follow my instructions below or change it however you want to.

2015-01-30-4295Now all you need to do is frost the cake and add a few more sprinkles. :)

Put the cake in the fridge until you serve it. Cut the cake, serve and ENJOY!

Funfetti Red Velvet Brownie Sheet Cake

Ingredients:                                                                                       2015-01-30-4283

1 Valentine’s Funfetti Cake Mix, of any variety of Funfetti

3/4 cup water or milk

1/3 cup vegetable oil

3 large eggs

1 Red Velvet Cake Mix

1/4 cup chocolate milk or water

1/3 cup oil

2 large eggs

3 cups powdered sugar

1 cup butter (preferably unsalted)

3/4 teaspoon almond extract

1/2 – 1 teaspoon cherry extract (start with 1/2 teaspoon, adding 1/4 teaspoon more at a time)

1/4 teaspoon clear vanilla extract

2-4 tablespoons milk

Valentine’s sprinkles, if desired

Directions:

1. Heat oven to 350 degrees F. Generously spray a 15 x 10 x 1-inch baking pan with cooking spray. The sides of the pan must be 1-inch high to prevent overflow when baking!

2. Beat the Funfetti cake mix, 3/4 cup water or milk, 1/3 cup oil and 3 eggs in large bowl using a stand mixer, or with a hand held electric mixer on medium speed for 1 1/2 minutes. Spread evenly in prepared pan. Stir by hand, red velvet cake mix, 1/4 cup water, 1/3 cup oil and 2 large eggs in a medium bowl only until blended. Swirl batters with tip the tip of a knife, pulling some cake batter to top surface.

3. Bake 30 to 35 minutes or until toothpick inserted comes out clean. Cool completely on wire rack.

4. Using a stand mixer, or a hand held mixer beat the powdered sugar, flavored extracts, and milk together. Beat for about 3 minutes, or until desired consistency is achieved. Frost cake, decorate with sprinkles and refrigerate until serving.

Makes 16-24 servings

 *If you want a brighter frosting simply add red food coloring 1 drop at a time beating after each addition.

In my house of fellas, they love the brownies! I play around with lots of different brownie recipes, both from scratch and a box. See at my house, the guys don’t care about homemade brownies at all! They first time they told me that I was shocked.

Now more often than not, I make my brownies from a box and simply adapt the flavors to be what I want that day. Today I wanted a chocolate caramel flavor that wasn’t too heavy, but still had lots of flavor. This is what I came up.

Birthday Oreo Brownie Cups

I think it’s safe to say that almost every Mom does some sort of Brownie and Oreo combination. Really, I think it just depends on what your kids, or your friends and family like, right?

Like most kids my boys love brownies, and they love Oreos. The only thing they love more is brownies and Oreos together!

This really isn’t a true “recipe” rather it is more of semi-homemade concept, that can be changed and modified numerous different ways. Just use whatever flavor Oreos your family likes, make your changes from there and enjoy!

With these Birthday Oreo Brownie Cups I like to stack two in a disposable cup, put a small dollop of regular white frosting on top of the second one (or the top one), garnish with a some coarsely chopped Oreos, and add more sprinkles if desired.

Why the plastic cup? They’re easy to transport that way if you’re bringing them somewhere, and if you’re serving them at home they’re easy to serve and eat that way. Of course you would remove the cupcake liners before you assembled the cups.

I have to say Oreos have come a long way. There are so many really good flavors to choose from these days!

To make the Brownie Cups perfect for any time of year, simply swap the Oreos with a different flavor and the sky is the limit. :)

Birthday Oreo Brownie Cups 

Makes 16 brownies, or 8 cups.

INGREDIENTS

1 box (regular size) Brownie Mix and ingredients called for on back of package

Birthday Oreos, Golden Birthday Oreos, or any other flavor of Oreos you prefer

Frosting of choice

Sprinkles

A few Oreos for garnish

 

DIRECTIONS

1. Heat oven to 350 degrees, or temp. called for on back of brownie box. Line cupcake pans with paper liners, and spray lightly with non-stick spray.

2. Prepare brownie mix according to instructions on back of box. Place about 1 Tablespoon of brownie batter in bottom of each muffin cup. Place Oreo on top of brownie batter (use any Oreo you like) and continue filling as you normally would for a brownie cupcake.

3. Bake as you normally would. After brownies are completely cooled, peel of paper liners, stack two in a cup, frost and decorate as desired.

* During the warm months I don’t like to use Buttercream Frosting for the Birthday Oreo Brownie Cups. We’re usually outside with the kids whenever we have a get-together where these Birthday Oreo Brownie Cups would be enjoyed.

It doesn’t take much heat at for Buttercream frosting to start to break down and look very unappealing, not to mention possibly get someone sick. I’m just saying… This treat needs to be refrigerated until served.

Well guys, it Wednesday again. I hope everyone is starting to get some warmer weather. We haven’t seen it yet, but it will come. The weather around here has been very, very strange lately.

Something fresh from the oven sounded good for dessert tonight. As I’ve explained to all of you before, IF we have dessert on Wednesday, we usually do something easy. And tonight that’s exactly what we’re doing. :)

Why do SUPER EASY desserts on Wednesdays? Because the weeks get busy with kids in the house. The school year is so busy with concerts, conferences, meetings, sports and so much more, and summer (our whole three months) is full of everything we can fit into three months of warm weather. If we’re lucky we get more, but don’t count on it!

FROSTED BROWNIE CUPCAKES

You Will Need: Two regular size muffin pans, cupcake liners, and nonstick baking spray

INGREDIENTS

1 box Fudge Brownie mix (13 x 9 Family Size)

Water, Oil, and Egg called for on back of package

1 container Butter cream frosting

ONE garnish of your choice – mini chocolate chips, mini M&M’s, sprinkles, or any garnish you prefer

DIRECTIONS 

1. Preheat oven to 350 degrees, or temperature called for on back of brownie box. Line muffin tins with paper liners, spray lightly with nonstick spray.

2. In a large bowl, mix brownie mix, water, oil, and eggs until well blended. Do not over stir.

3. Fill the lined muffin tins about 2/3 full. You will have approximately 20-24 filled muffin cups. Bake in the prepared muffin tins according to package instructions. Place a small amount of water in the empty muffin tins. Allow to cool completely before frosting and decorating with garnish.

MAKES 20-24 SERVINGS

MM TIP: Make this easy on yourself and pick just one garnish for these brownies. We all love brownies loaded with all of the goodies, but by the time you get frosting on the brownies and top them off with a few chocolate chips, M&M’s, or sprinkles, everyone will be happy. :)
