My Raspberry Cream Cheese Swirl Banana Muffins make a great snack anytime of day!

Some of my favorite recipes start with a cake mix. Of course I can make a cake from scratch, I just usually choose not to. Cakes mixes are just so much fun to play with! So today we start with a cake mix. What happens in the kitchen stays in the kitchen! :)

Being that I make a lot of different types of banana muffins/bread for different occasions I have a handful of different recipes I use as a starting point. This is hands down the easiest way to make banana bread/muffins I know of.

Just wait until you taste the raspberry cream cheese that is swirled into these muffins! It is SO good! Raspberries are always so wonderful in the Spring. I must say, I ate a lot of raspberries making these muffins!!

My Healthier Banana Bread Oatmeal Muffins make a great breakfast or perfect snack any time of the day.


Banana bread is always a favorite around here! I know many of you love it too! So, being that it’s January is National Oatmeal Month it just made sense to try and add some heart healthy oatmeal to my banana bread. Whole grains are always a good thing. If you’re not a fan of oatmeal in your food, please keep reading I explain in a bit how to make these muffins with or without oatmeal.

I have to be honest, I knew I wanted to use oatmeal because oats are all natural, heart healthy and pretty darn yummy, but I also wanted to make something any kid would be happy to pick up and eat in the morning with a glass of cold milk or orange juice!

The goal was to make a healthier banana bread muffin that was appealing enough that any kid would want to enjoy one. Goal accomplished, my kids loved these, I hope yours do too!

Never underestimate the power of a few sprinkles!


Only 2 tablespoons of sprinkles were used to make 24 muffins. My Healthier Banana Bread Oatmeal Muffins have just enough sprinkles to draw some interest!

One of my favorite flavor combos of the season has got to be these Vanilla Almond Eggnog Banana Bread Circles!

The other day when I was in the grocery store they were giving out samples of Vanilla Almond Eggnog. Being that the boys were with me we just had to try the Vanilla Almond Eggnog! They loved it! So of course I had to try it.

It was hands down the best eggnog I have ever tasted! If you enjoy the flavors of vanilla and almond, especially together, you will love this stuff! The boys were just happy to see it go in the cart. After all, it was on sale AND I had a coupon. :)

Thinking about Christmas and the Holiday break coming up soon I was trying to come up with something simple for breakfast. So I came up with this wonderful banana bread creation that is super easy to make, I promise!

These banana bread circles have a beautiful golden brown color even before you glaze them because of the wonderful eggnog used in the batter.

My Vanilla Almond Eggnog Banana Bread gets even better when it sits in the fridge overnight! I love that about banana bread!

Glazed Eggnog Banana Bread Circles

Ingredients:                                                                                             2014-12-22 4014

Banana Bread:

1 package yellow cake mix, regular size

1 egg

1/2 cup Vanilla Almond Eggnog, (I used J. R. Watkins which is a Kemp’s product)

3 mashed ripe bananas


1-1/2 cups powdered sugar

2-3 tablespoons eggnog, may vary slightly

Snowflakes sprinkles, or other sprinkle, if desired


1. Spray desired pans with cooking spray. You could used mini rings pans, muffin pans, or even regular loaf pans. Preheat oven to 350 degrees F. In a large bowl combine the cake mix, egg and eggnog. Add mashed bananas; beat on medium speed for 2 minutes.

2. Pour into sprayed pans, filing about 3/4 full. Bake for 15-17 minutes, or until toothpick inserted near the center comes out clean. Cool completely on wire racks.

3. In a small bowl, combine powdered sugar and eggnog with a whisk until desired consistency is reached.

4. When banana bread is completely cool, drizzle with eggnog glaze and decorate with sprinkles, if desired. Allow glaze to harden before serving. Or place rings, bread or any other shape in an air-tight container and store in fridge overnight, then serve.

*Note: To make as a regular loaf – pour into one 9-in. x 5-in. loaf pan, or two 8-in. x 4-in. loaf pans and bake for 35-40 minutes, or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans(s) to wire racks to cool completely.

This is not a Dutch baby, nor is it supposed to be. What is it? It’s an absolutely wonderful baked pancake! My Banana Biscoff Chocolate Chip Baked Pancake is a wonderful change of pace!

There may seem like a lot of flavors going on with this baked pancake, but the flavors are very well balanced and they compliment each other so well. That’s exactly what I was hoping for when I put my Banana Biscoff Chocolate Chip Baked pancake together!

If you’ve been reading my blog for a while you know we love bananas around here! If you haven’t been with me long – we truly LOVE bananas! They’re usually available in the grocery store, and I hope it stays that way. :)

Because we usually have bananas around I love to experiment and try new recipes with bananas pretty frequently. So, today I bring you my Chocolate Swirl Banana Bars that make a great dessert any night of the week!

The nice thing about these bars is like banana bread, they get better in the fridge after they sit a bit. Don’t you just love it?


This recipe starts with a cake mix, which always makes things easier. From time to time I like to bring you guys recipes that start with a mix for those times when you just don’t have the time or desire to make something from scratch.

I don’t judge! Being a wife and mom, I get it! Personally I think it’s always good to have a combination of from-scratch and from-a-mix recipes in your collection. You decided what recipes you want to use and when. :)


These bars are super-moist and just so delectable. My Chocolate Banana Swirl Bars are great by themselves for those who want just a bar for dessert, and they’re absolutely fantastic with a scoop of Ben & Jerry’s Chunky Monkey (banana ice cream with chocolate chunks and walnuts). Just saying!


Chocolate Swirl Banana Bars

Ingredients:                                                                                 Chocolate Swirl Banana Bars_2557

1 regular yellow cake mix

1 stick butter, melted

1 large egg

3/4 cup mashed ripe bananas, (about 2 small)

1 cup miniature chocolate chips


1. Heat oven to 350 degrees. Spray 9 x 9-inch pan with cooking spray, or line with parchment paper.

2. Mix the cake mix, melted butter and egg in a large bowl with a heavy spoon until well blended (dough will be thick). Measure out about 1 cup of the dough and set aside. Mix the mashed bananas into the remaining dough until blended, then spread into prepared pan.

3. Microwave 3/4 cup of the miniature chocolate chips in a medium microwaveable bowl on High for 30 seconds at a time until chips are melted and smooth. Mix in the reserved 1 cup of dough with heavy spoon until blended. Drop by large spoonfuls over banana dough, then spread to mostly cover. With the tip of a kitchen knife, lightly swirl the doughs. Sprinkle with the remaining 1/4 cup of miniature chocolate chips, using more if desired.

4. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Transfer pan to a wire rack and cool completely. Cut into bars, top with ice cream if desired, serve.

Makes 12 Bars.
