Rustic Baked Apples

February 8, 2014 · by Mega ·

Farm fresh apples, lots of cinnamon, and just the right amount of brown sugar, all wrapped in a wonderful crust. Fresh from the oven they are so warm and so good, the only thing you need now is a fork!

Some of you know this, some of you don’t, but I am really a minimalist at heart. A lot of bloggers lean more towards the fancy side of food, and that’s fine. Around here we’re all about the flavor!

I think it is the simple, well done recipes that create the greatest happiness. My fellas don’t crave fancy desserts, yet they beg me to make any kind of chocolate chip cookies several times a week.

This particular version of my Rustic Baked Apples can be done any time of year. To be honest, I forgot I never posted this particular version of one of my favorites.

We’re not really pie people here, but I have to admit when I make these baked apples we eat them in record time. Fresh from the oven they are so good!

Apple (Pie) Flower Bowls

December 13, 2013 · by Mega ·

Apple (Pie) Flower Bowl, what’s that, you may ask? An Apple (Pie) Flower Bowl is all the best parts of an apple pie, in a Ramekin, with a few Snickers bites, and topped of with a wonderful golden brown crust! Are you with me?

Apple Flower Bowls_027

This is what I like to call an Apple (Pie) Flower Bowl. It isn’t exactly an apple pie, but it does have all of the best parts of an Apple Pie!

These little Ramekin treats are filled with lots of fresh apples, cinnamon, nutmeg, allspice, just a few Snickers bites, and of course topped with crust.

Simply Delicious Fresh Apple Muffins

September 23, 2013 · by Mega ·

Fresh honeycrisp apples, home-made applesauce and yogurt come together in these well-balanced and delicious muffins. The granola topping is a wonderful toouch, but definitely not necessary.

Simply Delicious Fresh Apple Muffins

World please meet my newest muffin. This Fresh Apple Muffin is simple and delicious, and full of real apple goodness! Plus it’s a pretty fantastic way to start the day!

This muffin also has several components that are really quite good for you! I also love to add yogurt to many of my muffins and mini loaf recipes. It’s a great way to make them tender and moist. Of course the home-made applesauce helps with that as well. 🙂

Apples: You see here freshly chopped Honeycrisp apple. You don’t have to use Honeycrisp! I used Honeycrisp because that’s what I had on hand. Remember you can chop the apple as large, or small as you want to.

Muffins: Just to give you an idea of what the muffins look like before they’re popped into the oven. The batter is fairly thick.

Simply Balanced: This is Simply Balanced apple cinnamon muesli cereal made with natural ingrdients, available at Target. I used this for the granola topping. It was perfect! Again this is completely optional.

I’ve said it before and I will say it again, I truly believe it is the simple, well done, recipes that bring the most satisfaction! The people I bake and cook for prefer simple food over complex food, hands down any day of the week.

This muffin is simple, fresh and delicious!

December 25, 2012 (Christmas Day)

December 25, 2012 · by Mega ·

Merry Christmas Everyone!

Here’s a little fun fact right up my tree, so to speak.

Did you know the earliest Christmas tree decorations were apples? That’s right apples! At Christmas time, medieval actors would use apples to decorate paradise trees (of course they were usually fir trees) during “Paradise Plays,” which were plays depicting Adam and Eve’s creation and fall.

Happy Holidays!

From our family to yours, have a safe and merry holiday!
