After the Super Bowl yesterday I thought it might be nice to go with something a little lighter today. I hope you enjoy these Orange Blossom Cookies!

This cookie is sunny and light and very enjoyable. People of all ages enjoy this cookie, and that’s always a good thing. It’s nice to have a few recipes like this in your collection.

To be honest with you I stumbled across a recipe for soft lemonade cookies on line at Taste of Home when I was looking for a recipe for something else. I never did find the other recipe, but that’s okay. I found this one and adapted it a bit, and made it orange.

This cookie is refreshing and gives you a chance to enjoy a little something after a meal or whenever, without being too much. This cookie is perfect for warm weather days. Now we just some warm weather!

In the recipe listed below i mention you can add freshly grated orange zest if you would like to. I have made these both with and without extra zest.

Either way they turn out delicious with plenty of orange flavor because of the orange juice concentrate used in the cookies.

As you can see in the picture I went a little heavy when brushing the orange concentrate on the cookies. We love citrus here!

You can decide for yourselves if you like the concentrate thicker or thinner. But make sure you don’t brush on the concentrate until after the cookies come out of the oven.

  • 1 cup sugar
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 cup thawed, orange juice concentrate, divided
  • Fresh orange zest

Instructions
  1. Heat oven to 400 degrees F. Take out cookie sheets, and scoop or spoon to be used; set aside.
  2. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. If using added orange zest, add now. Combine flour and baking soda; add to the creamed mixture alternately with 1/3 cup orange juice concentrate, beating after each addition. Meaning add 1/2 the flour mixture and beat, add 1/3 cup orange juice concentrate and beat, add the other 1/2 of flour mixture and beat one more time.
  3. Drop by rounded small scoops onto ungreased baking sheets. Bake at 400 degrees F for 8-9 minutes. Remove to wire racks for cooling. Brush with reaming 1/2 cup orange juice concentrate, sprinkle with sugar. Cool.
  4. These cookies keep best when stored in the fridge.
