Fajita Bowtie Salad

Simple and full of great flavors this pasta salad would be a fabulous addition to any Cinco de Mayo celebration!


My Fajita Bowtie Salad is perfect when you’re looking for something people haven’t been served a million times before. Simple and full of great flavors this pasta salad would be a fabulous addition to any Cinco de Mayo celebration!

This pasta salad also makes a great lunch. Of course you can also make it for dinner, simply round it out with a bowl of fresh fruit, and maybe some cornbread. Dinner is served!


For this salad I used leftover rotisserie chicken, which I normally never have. But today I did, the boys were gone (hehe). But you could also cook off a couple of chicken breasts and cut them up if you prefer.


Not sure why but we love bowtie pasta! It’s just a nice change of pace.


Corn and Black Bean Salsa is perfect for this pasta salad. If you’re wondering what that thing with the hearts is, it’s my spatula. Sorry I know it looks a little funny here.


Chopped fresh cilantro would be great on this pasta salad! I used parsley because my guys really don’t like cilantro, they say it tastes like soap. Either way this pasta salad is wonderful. I like to serve it with the rest of the salsa from the jar on the side.

Fajita Bowtie Salad

  1. Cook pasta per the package instructions. Drain pasta when finished and allow to cool slightly.
  2. Whisk together seasoning, mayonnaise, sour cream and milk.
  3. In a large bowl, toss chicken, pasta and approximately 3/4 of the salsa. Fold in season mixture, toss well. Add a little salt, pepper and chopped fresh cilantro, if desired.
  4. Allow the bowl to sit in the refrigerator for at least 30 minutes, to allow flavors to develop. Serve with the remaining 1/4 jar of salsa on the side.
