Cranberry Splash Bundt Cake

Right off the bat I’m just going to say what many of you may be thinking – Cranberry Splash? Yes I used Cranberry Splash Sierra Mist in this cake and am I glad I did. Of course you could use any brand of pop/soda you want.

This Cranberry Splash Cake brings you the flavor of cocoa and just a hint of something special under a layer of delicious cream cheese icing! The soda/pop is the secret ingredient that really turns the cake into something special.

Have no worries the flavor of cranberry does not overwhelm the cake! Instead you have an incredibly moist cake that’s a nice change of pace. :)


You’re going to notice the batter is a little thin. Don’t let that scare you.


When making a bundt cake always let it cool for a while before trying to get it out of the pan, about 20 minutes. It will naturally pull in a bit as it cools.

This is normal and this is what you want. It makes it so much easier to invert the cake on to a cake stand or plate.


For the icing I just had to go with a cream cheese icing. You can use any kind of icing you want, you could even make the icing with more Cranberry Splash soda.

But I have to say the cream cheese icing was perfect on this cake! Of course a few sprinkles are always a nice touch…just saying.

Cranberry Splash Bundt Cake         

Ingredients:                          2016-05-22-8032

2 cups all-purpose flour

2 cups sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 stick of butter

3 tablespoons cocoa powder

1 cup Cranberry Splash Sierra Mist

2 large eggs

1/2 cup buttermilk

1 teaspoon vanilla

Cream Cheese Glaze:

1 1/2 cups powdered sugar

4 tablespoons butter, melted

2 ounces cream cheese, softened

2-4 tablespoons milk

1 teaspoon vanilla


1. Preheat oven to 350 degrees. Generously grease bundt pan.

2. In a large bowl whisk the flour, sugar, baking soda and salt. In a small saucepan, combine Sierra Mist, butter and cocoa; bring just to a boil, stirring occasionally. Add to flour mixture, mixing just until moistened.

3. In a small bowl mix eggs, buttermilk and vanilla until blended; add to flour mixture mixing until totally incorporated.

4. Transfer to prepared bundt pan. Bake for about 40 minutes or until a toothpick comes out clean.

5. Allow to cool in pan for at least 20 minutes; this will allow the cake to pull back a little bit and allow it to be flipped out of the pan a little easier.

6. Allow cake to cool completely. Turn upside down onto serving platter.

7. In a medium bowl using a stand mixer or handheld mixer mix cream cheese glaze ingredients on low speed until smooth, no lumps. If glaze is too thick add additional milk 1 teaspoon at a time, until you reach your desired consistency.

8. Once cake is completely cool, pour a generous band of icing along the top and allow it to slide down the cake. Allow the cake to sit until the icing is fully set and no longer tacky or hardened on the outside.

Cookie Dough Chocolate Bark


My Cookie Dough Chocolate Bark makes a great chocolatey snack, wonderful dessert, or even a fun gift! Chocolate and cookie dough…always delicious! 2016-04-08-7875 My fellas LOVE chocolate chip cookie anything, most people do right? This chocolate bark is made with delicious dark chocolate & wonderful cookie dough.

I can’t tell you how excited my guys were to try this bark. They absolutely loved it!! What’s not to love? Of course this recipe is made with an eggless cookie dough so it’s safe for all to enjoy!


I used Trader Joe’s Dark Chocolate because the taste is wonderful. But feel free to use any kind of chocolate melting wafer you like.


Melt your chocolate and pour it onto a regular size cookie sheet lined with parchment paper. Be sure to spread it evenly so it’s about the same thickness all the way through.

Drop little pieces of cookie dough onto the melted chocolate pressing the cookie dough into the chocolate just a bit. You can also add a few sprinkles if you want to.

If you are going to drizzle a little white chocolate over the entire thing be sure to wait until the cookie dough bark has set up and is nice and firm. Immediately add a few more sprinkles if you are doing so.


Cut or break the Cookie Dough Chocolate Bark into pieces. Some people like to cut their bark a certain way, some like to break it up into pieces that are different shapes and sizes.

Break it, cut it, do whatever works for you. This bark is going to be delicious!

The week before Target had PayDay candy bars on sale so I picked up a bag knowing I was going to use them very soon, and so I did. :)

You want to chop up the PayDay candy bars into smaller pieces, but not tiny. The chunks in the cookies here and there are wonderful. Keep in mind they bake down quite a bit.

You want to be sure to let the cookies cool for at least 5 minutes on the cookie sheet. This is very important. Then finish cooling your cookies completely on a baking rack.

First of all I would like to apologize for not posting in quite some time! Truth be told, between my three jobs, busy household and almost no sun to speak of for days at a time here it has been almost impossible! No excuses, my apologies and I will try not to let it happen again. :)

I developed this recipe based on what I thought would make a really good Raspberry White Chocolate Muffin. The flavored creamer really adds a wonderful, wonderful touch!

This recipe is a keeper because you change vary it so many different ways, that’s if you want to of course.

These Raspberry White Chocolate Muffins are fabulous for breakfast, brunch or an after school snack. They also travel well if you want to bring a couple to work or school with you.

One Skillet Chili Mac and Cheese


This One Skillet Chili Mac and Cheese is the perfect weeknight dinner when a little comfort food is what you’re looking for – and it’s pretty darn healthy! :)


Chili Mac is a great dinner the whole family can enjoy! Chili Mac is one of those dishes you can make so many different ways and I love that!

The flavor of this One Skillet Chili Mac can’t be beat. The best part is there’s are a lot of healthy ingredients in this dish such as extra lean ground beef, kidney beans, diced tomatoes, and green chilies. So many great flavors!

Then at the end I like to top it off with a little Chipotle Cheddar and let it melt in just a bit. One Skillet Chili Mac and Cheese is one great meal waiting to be served!


The Chipotle Cheddar is always so good, but feel free to use regular cheddar or any other cheese you prefer.

Personally, I like to add a 1/2 cup of shredded Chipotle Cheddar at the end, let that sort of melt in, stir to incorporate the cheese, then top with another 1/4 cup of Chipotle Cheddar immediately before serving.


So many great flavors going on you can’t go wrong with this one! Some days I like to add a finely chopped jalapeño just to kick it up even a little more!


When I make my chili mac I use a 10-inch skillet with deep sides. It turns out great! You could use a stock pot if you prefer. I cook everything in this one skillet, including the pasta.


One Skillet Chili Mac and Cheese

Ingredients:                                          2015-11-02-7516

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, chopped

1 pound lean ground beef, or ground turkey

4 cups chicken broth

1 can (14.5 ounces) diced tomatoes with green chilies, undrained

1 can (8 ounces) tomato sauce

1 can (5.5ounce) Spicy Hot V-8

1 can (15 ounces) dark red kidney beans, rinsed and drained

2-3 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon cayenne pepper

Freshly ground black pepper and kosher salt, to taste

2 cups uncooked elbow macaroni

1/2 cup shredded Chipotle cheddar cheese + 1/4 cup

Fresh chopped parsley, or dried parsley


1. Heat olive oil in a large deep skillet over medium high heat. Add minced garlic, onion and ground beef, and cook until nicely browned. Drain excess fat.

2. Add the beans. tomatoes, tomato sauce, chicken broth, V-8 juice, and seasonings. Season with salt and pepper, to taste. Bring to a simmer and stir in pasta. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-16 minutes.

3. Remove from heat. Sprinkle with 1/2 cup cheese; cover and let stand until cheese is melted. Gently stir in cheese to evenly disperse cheese throughout. Immediately before serving top with remaining 1/4 cup cheese, garnish with parsley if desired.

Makes 6 Servings
