Pineapple Banana Hummingbird Mini Loaves
1 (regular size) yellow cake mix
1 package (4-servings) vanilla instant pudding
4 large eggs
1/4 cup canola oil, or vegetable oil
1 teaspoon ground cinnamon
1 can (20 oz.) crushed pineapple, well drained with 1 cup juice reserved
3 ripe bananas, mashed
Cream Cheese Drizzle:
4 ounces cream cheese, or 1/3 less fat cream cheese, softened
2 tablespoons milk
1 cup powdered sugar
1/2 teaspoon vanilla
Directions:
1. Preheat oven to 350 degrees F. Spray 5 foil mini loaf pans with cooking spray.
2. Combine cake mix, dry pudding mix, cinnamon, eggs, oil and reserved pineapple juice in a large bowl with mixer until blended. Add crushed pineapple, and bananas; beat just until blended.
3. Pour into 5 foil mini loaf pans that have already been sprayed. Bake for 40 minutes, or until toothpick inserted in center comes out clean, Cool completely.
4. Combine softened cream cheese, with milk, powdered sugar and vanilla in a small bowl with mixer until blended; when desired consistency is reached drizzle over loaves.
