My Chocolate-Dipped Honey Peanut Butter Cookies make the perfect cookie for any occasion! Honey peanut butter and chocolate..so yummy!
These cookies may look a little out of season but I guarantee you I was thinking SPRING all the way! I was so happy to see the sun the other day I got kind of caught up in the yellows and oranges that you see with a nice sunny sky! 🙂
So hopefully that explains the yellow and orange. Use any color of nonpareils (the little ball sprinkles) you like. Use whatever color makes you happy!
The flavor of the honey peanut butter really adds a nice touch to the cookies. Think of the cookies as being honey kissed. There’s just enough wonderful honey flavor to make these cookies extra tasty and extra special for Spring!

Notice how one of these things is not like the others? The one that’s not like the others is my son’s cookie. I just had to include his cookie! Sometimes you just gotta laugh and go with the flow. 🙂
The miniature chocolate chips give the cookie a nice touch without being too much.
I can not stress enough how good the honey peanut butter is in these cookies! Absolutely perfect for Spring and Summer! But if you’re not a fan of honey peanut butter feel free to use regular peanut butter. The cookies will still be fantastic!
Chocolate-Dipped Honey Peanut Butter Cookies
1 cup light brown sugar, firmly packed
3/4 cup honey peanut butter (I used Skippy Peanut Butter with Honey, but any brand will do)
1/2 cup unsalted butter, softened
1/2 teaspoon vanilla
1 large egg
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 cup miniature chocolate chips
12 ounces milk chocolate melts
Orange, White & Yellow Nonpareils, or any other color combination
1. Beat brown sugar, honey peanut butter, butter, egg and vanilla until light and fluffy. Beat in flour and baking soda on low speed a little at a time. Stir in miniature chocolate chips by hand.
2. Using a cookie scoop or regular spoon shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets. Flatten in a crisscross pattern with tines of fork.
3. Bake at 375 degrees F for 6 to 9 minutes or until set. Cool on wire racks.
4. Melt chocolate melts according to package instructions. Dip Honey Peanut Butter Cookies into melted chocolate and lay onto a cookie sheet lined with parchment paper. While chocolate is still warm, sprinkle immediately with colored nonpareils. Use any color combination you like! Place cookies in the fridge for a few minutes to set chocolate. Serve room temperature.
