It sure feel good to be at the beginning of a new year, but I have to say the cold can make life challenging. Of course not everyone lives in a cold-weather state, but this Winter seems to keep sharing the cold! So a little warm comfort food seems to be in order here.
Today I prepared for you what I think is the perfect cold weather dessert for you family and friends…my Skillet Baked Caramel Apple Dessert.
Being that it is Winter, and so much of the country is experiencing some really cold weather right now I wanted to develop a dessert that you can throw together in very little time. The kids love it served warm with a scoop of ice cream and delicious warm caramel sauce drizzled across the top. My Skillet Baked Caramel Apple Dessert is such a nice way to finish off the meal, especially on a cold night!

Here you have your cut up apples, again I washed the apples but I didn’t peel them. Often times I don’t peel my apples because there are some really great vitamins, nutrients and fiber in the skin. If you prefer the apples peeled go ahead and peel them.
Everyone has a different apple they like to bake with, and even that varies by region. My advice to you is to either use your favorite apple, or check out the charts in the produce department in your local grocery store and see what they recommend. Today I used a mixture of Fireside and Honey Gold apples, because I love them both and that’s what I had.
Skillet Baked Caramel Apple Dessert
1 package (about 15 ounces) yellow cake mix, vanilla also works well
5 cups sliced cooking apples, peeled if you desire (about 5)
1/2 cup Kraft Caramel Bits
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 cup (1 stick) butter, melted
Vanilla Bean ice cream, optional
Warmed Salted Caramel Topping, optional
1. Preheat oven to 350 degrees. Lightly spray skillet with nonstick cooking spray. Even if you’re using a nonstick pan I strongly urge you to lightly spray your skillet with nonstick cooking spray
2. Wash the apples. Peel apples, if desired; slice and roughly chop the apples. In a large bowl toss the apples with cinnamon, nutmeg, and allspice. Add caramel bits to bowl. Gently stir mixture to evenly distribute ingredients.
3. Spread apple mixture evenly in bottom of oven-proof, or cast iron skillet. Top with dry cake mix, carefully sprinkling cake mix over apples, or spread over apples using a fork. Do not mix. Evenly drizzle butter over cake mix, covering as much area as possible.
4. Bake for 30 to 35 minutes or until top is golden brown and cake is set. Cool 15 to 30 minutes. Serve warm with ice cream or whipped cream and warm salted caramel topping, if desired.
Makes 12 servings
