I’ve said it before and I will say it again, brown butter and chocolate chunks always make for a wonderful, wonderful cookie!
Don’t worry there are LOTS of chocolate chunks buried in these cookies.
DO NOT think this is just another chocolate chip cookie! My Brown Butter Chocolate Chunk Cookies are going to disappear in no time at all. Yes, they are that good!
To brown the butter simply melt it over medium heat stirring it fairly often until it turns a nice deep golden brown. You will see brown bits at the bottom of the pan. That’s a good thing – you want this to happen!
Let the butter cool for about 5 minutes, then beat it with your sugars, egg and vanilla.
Let me tell you a little secret…the best part about adding the brown butter and chocolate chunks is they add something special to the cookie that you can’t quite put your finger on, and it’s that something special that keeps you coming back for more!
Brown Butter Chocolate Chunk Cookies
1 stick unsalted butter
1/2 cup brown sugar
1/2 cup white sugar
1 large egg
1 teaspoon vanilla
1 1/2 cups flour
3 tablespoons instant vanilla pudding mix
1 teaspoon baking soda
1/2 teaspoon salt (skip if using salted butter)
1 1/2 cups chocolate chunks, or you can just use the standard 2 cups
Directions:
1. Preheat oven to 350 degrees F. and line two large baking sheets with baking mats or parchment paper.
2. Place butter in a small saucepan over medium heat. Let butter melt and until browned. Remove and let cool for about 5-7 minutes. Mix together browned butter and sugars in a stand mixer, or using a hand mixer. Beat until combined well. Add eggs and vanilla. Mix until combined. Add flour, pudding mix, baking soda, and salt. Beat until just combined. Stir in chocolate chunks.
3. With a cookie scoop, or tablespoon, scoop dough onto prepared baking sheet about 2 inches apart. Bake for 10-12 minutes, or until baked through. Let cool on baking sheet for 2-3 minutes before transferring. Cool completely on wire rack.
Makes about 24 cookies.
