One of my favorite flavor combos of the season has got to be these Vanilla Almond Eggnog Banana Bread Circles!
The other day when I was in the grocery store they were giving out samples of Vanilla Almond Eggnog. Being that the boys were with me we just had to try the Vanilla Almond Eggnog! They loved it! So of course I had to try it.
It was hands down the best eggnog I have ever tasted! If you enjoy the flavors of vanilla and almond, especially together, you will love this stuff! The boys were just happy to see it go in the cart. After all, it was on sale AND I had a coupon. 🙂
Thinking about Christmas and the Holiday break coming up soon I was trying to come up with something simple for breakfast. So I came up with this wonderful banana bread creation that is super easy to make, I promise!
These banana bread circles have a beautiful golden brown color even before you glaze them because of the wonderful eggnog used in the batter.

Winter was on my mind so I used just a few snowflake sprinkles. In this case less in more!
My Vanilla Almond Eggnog Banana Bread gets even better when it sits in the fridge overnight! I love that about banana bread!
Glazed Eggnog Banana Bread Circles
Banana Bread:
1 package yellow cake mix, regular size
1 egg
1/2 cup Vanilla Almond Eggnog, (I used J. R. Watkins which is a Kemp’s product)
3 mashed ripe bananas
Glaze:
1-1/2 cups powdered sugar
2-3 tablespoons eggnog, may vary slightly
Snowflakes sprinkles, or other sprinkle, if desired
Directions:
1. Spray desired pans with cooking spray. You could used mini rings pans, muffin pans, or even regular loaf pans. Preheat oven to 350 degrees F. In a large bowl combine the cake mix, egg and eggnog. Add mashed bananas; beat on medium speed for 2 minutes.
2. Pour into sprayed pans, filing about 3/4 full. Bake for 15-17 minutes, or until toothpick inserted near the center comes out clean. Cool completely on wire racks.
3. In a small bowl, combine powdered sugar and eggnog with a whisk until desired consistency is reached.
4. When banana bread is completely cool, drizzle with eggnog glaze and decorate with sprinkles, if desired. Allow glaze to harden before serving. Or place rings, bread or any other shape in an air-tight container and store in fridge overnight, then serve.
*Note: To make as a regular loaf – pour into one 9-in. x 5-in. loaf pan, or two 8-in. x 4-in. loaf pans and bake for 35-40 minutes, or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans(s) to wire racks to cool completely.
