Baked Donuts are one of my absolute favorite treats to make! There are so many WONDERFUL flavors that a person can come up with, it just makes it so much fun every time!
I will be completely honest with you guys. Sometimes I make the mix from scratch and sometimes I don’t. You can get a very, very good donut using a cake mix! It all depends on what you add to the mix.
Then of course there’s the frosting. I am not much of a frosting person, but I love this homemade frosting! It is SO incredible wonderful! My guys couldn’t get enough!

Then for a touch of something extra special I added some chopped pumpkin cream cheese cookies, but sprinkles would work just fine.
Or if you prefer frost the donuts and serve them just like that. They will still be wonderful!
For the special crumble on these Pumpkin Baked Donuts I used Pumpkin Cream Cheese Cookies from Target. We all thought the crumble added a really nice touch!
Even if this doesn’t seem like a cookie you would normally eat, I strongly recommend you give them a try. Chopped up to just the right size they really add a nice final touch!
These donuts are SO moist and SO delicious! I wish the pictures could somehow tell you just how wonderful they are.
Pumpkin Baked Donuts with Cream Cheese Frosting
1 regular size Pumpkin cake mix
2 large eggs, room temperature
1 stick melted unsalted butter
1 cup buttermilk. room temperature
Cream Cheese Frosting:
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1/2 teaspoon vanilla extract
1 to 1-1/2 teaspoons ground cinnamon
1/4 cup chopped/crushed pumpkin cream cheese cookies
1. Preheat oven to 350 degrees F. Lightly grease donut pan, or mini muffin pan. Combine melted butter, eggs, and buttermilk. Add mix. Stir by hand until smooth. Pour batter into prepared pan. Bake for 13 to 15 minutes.
2. Allow donuts to cool in pan for 5 minutes. Transfer to wire racks to cool completely.
3. For the frosting, in a large bowl, beat cream cheese and butter until light and fluffy. Add powdered sugar, vanilla and cinnamon; beat until smooth. Frost cooled donuts as desired. Sprinkle with chopped cookies. Refrigerate leftovers.
Makes 20-24 Donuts.
* If you don’t have buttermilk on hand simply make your own! Pour a scant cup of milk into a small bowl, add 1 tablespoon of lemon juice. It can even be lemon juice from the plastic lemon we all know and love! Allow milk to sit for at least 10 minutes. This gives the milk a chance to turn into the consistency you want for buttermilk and warm up a bit.
