With Back to School coming up next week, I’ve got a wonderful quick and easy recipe for you today that is FUN and tasty!

I know many kids have already gone back to school for the year. I can’t believe summer is over all ready!

Go get your favorite Yellow Cake Mix and if you have kids, or like Oreos, you probably have the rest of the ingredients right in your pantry.

Hope you have a great Back to School 2014!

These blondies are quick, easy, and they make a great dessert when you don’t have a lot of time!

I purposely chose Heads or Tails Oreos and Yellow Cake Mix because I just wasn’t wanting something super heavy and rich. However, depending upon the day you may want to use a different combination.

Also, the Heads or Tails are Double Stuff, which from what I’m told makes a huge difference. :)

I like to chop the Oreos in sort of a chunky style. Feel free to chop them however large or small you want to. Keep in mind, the pieces will naturally break down a bit as they’re folded in to the mixture and pressed into the pan.

Ingredients:                                                                                                    Heads or Tails Oreo Blondies_170906

1 box yellow cake mix

1 stick melted butter, unsalted if you have, if not use regular butter

1 large egg

12 Heads or Tails Oreos (about 1 1/2 cups) reserve 1/4 cup to sprinkle on top

1/3 cup Rainbow Sprinkles + extra for top

1. Preheat oven to 350 degrees F.  Spray an 11 x 7-inch pan with cooking spray.

2. Place cake mix, melted butter, and egg into a large mixing bowl. Mix until dough forms and ingredients are well combined. Mixture will be very thick. Fold in Oreo pieces and 1/3 cup sprinkles. Spread in pan. Top with reserved chopped Oreos and a few more sprinkles.

3. Bake 25-30 minutes or until edges are just starting to turn brown. Allow to cool completely before cutting into squares.

*Note: I also tried a 8 x8-inch pan. I was not happy with the results. For best results use 11 x 7-inch pan.

Makes 18 servings.
