My apologies everyone for not posting anything recently! I am truly very, very sorry!!
I was NOT on vacation or having fun. My computer crashed and it crashed hard! You know how you hear people say they lost everything? I SO get it now! It’s such a terrible, terrible feeling!!
After my computer crashed things just got worse from there. Instead of boring you with all of the details I will just say thank goodness my husband is an IT Professional and good at what he does, or I would not be posting right now!!

So I purposely chose a fairly simple cookie that is one of our tried and true favorites around here!
Not only do my kids love this cookie, so does pretty much everyone I know! This is a cookie that can be served just about anywhere.
This cookie starts with a cake mix, and let me tell you, it’s guaranteed not to disappoint.
The first time I saw this recipe was at Betty Crocker a couple of years ago. At first I wasn’t sure what to think, but let met tell you – this recipe is a keeper! I have modified the recipe numerous different ways and every single time these cookies have turned out great!
Just one bit of advice, even if you’re a chocolate fan try this recipe with a yellow cake first. Of course my kids, family and friends all love chocolate. Who doesn’t? But there’s something about the yellow cake version that is just so yummy and comforting. 🙂
I made my cookies big and round for a Spring get-together the boys were having. You can make them as big or small as you want to.
These cookies are a great alternative to cake! There are just times when you need something fun and tasty for a treat, but don’t want cake.
These cookies also work out well when you’re having an outside get together and the kids, or anyone else, can just grab one and go!

Crazy Good Confetti Cookies
1 yellow cake mix
1/4 cup confetti sprinkles
1/2 cup butter, melted
1 tablespoon milk
1 egg, brought to room temperature
Extra confetti sprinkles for sprinkling after frosting the cookies
Vanilla Cream Frosting
1 stick butter, softened
3 cups confectioners’ sugar
1 – 3 tablespoons Nestle Natural Bliss Vanilla Coffee Creamer, this will depend on how thick you want your frosting
*If you don’t have or don’t want to buy the coffee creamer that’s fine. Simply use milk instead and add 1/2-1 teaspoon of additional vanilla extract to the frosting.

1. Heat oven to 350 degrees F. In a large bowl, stir cake mix, rainbow sprinkles, butter milk and egg until soft batter forms. Scoop approximately 2 tablespoonfuls of dough onto ungreased cookie sheet or cookie sheet lined with baking mat.
2. Bake 10 to 12 minutes or until cookies are set. Remove from cookie sheet; cool completely.
3. Beat softened butter until smooth. On medium speed, slowly add confectioners’ sugar. When the two are combined well, beat mixture on high until light and fluffy. Add vanilla creamer 1 tablespoon at a time, mixing well after each addition. When desired consistency is reached add desired amount of vanilla extract to combine well.
4. Frost cookies as desired. Decorate with additional rainbow sprinkles, or sprinkles of choice. Chill cookies for 30 minutes to set.
