Lovely Lemon Yogurt Muffins

Lemon Lovers listen up! If you love the flavor of lemon in the morning this muffin is a great way to start your day!

Truth be told, this is really sort of a muffin/cupcake or cupcake/muffin, but we’re just going with “muffin” today.

My Lovely Lemon Yogurt Muffins are meant to be a muffin with a few healthier ingredients added, such as Greek yogurt, and a few other things we’ll go over in just a moment.

These muffins have a whole lot of lemon going on and that’s quite intentional. Lemon is just so refreshing any time of year. It’s like a burst of sunshine added to your day, and most of us can use that right about now!

To make things easy these muffins start with a cake mix, white or yellow work best.

Then we’re going to add some Greek yogurt. In case your’e not aware, Greek yogurt = added protein and moisture. :)

Because of the Greek yogurt these muffins are so velvety and smooth, the texture is wonderful!

If you have someone in your house who doesn’t like the taste of Greek yogurt, don’t worry, they won’t notice. I don’t say that unless I really, really mean it, and I do!

There’s no funny yogurt taste with these lovely muffins. :)

Lovely Lemon Yogurt Muffins

How about a big bite of lemon bliss in a soft moist muffin to start of your morning? My Lovely Lemon Yogurt Muffins are sure to deliver!

1 white or yellow cake mix, regular size (be sure to use just the cake mix, not all the ingredients called for on the box)

1 cup plain or vanilla Greek yogurt

1 cup water

Lemon Glaze:

2 cups powdered sugar

3 tablespoons freshly squeezed lemon juice

Topping:

1 – Fiber One Lemon Bar, chopped into small crumbs, optional

OR

sanding sugar, or course ground sugar, if preferred

directions:

1. Heat oven to 350 degrees. Line cupcake pans with paper liners. Set aside. In a large bowl combine cake mix with yogurt and add 1 cup of water. With a whisk combine thoroughly. Fill cupcake liners 3/4 full.

2. Bake muffins according to the instructions on the back of the box. Use the same amount of time used for cupcakes.

3. To prepare glaze, place powdered sugar into a large bowl. Slowly add lemon juice until smooth and desired consistency. You want it to be a good glazing consistency. Be sure to squeeze lemon over a small strainer of some kind to keep lemon seeds from falling in. Drizzle over cooled muffins, and top with chopped fiber Lemon One Lemon Bar, if desired. Let muffins stand for 15-20 minutes for icing to set up a bit.

*I like to top these Lovely Lemon Yogurt Muffins with just a tiny bit of chopped Fiber One Lemon Bar. Please do NOT buy the fiber bars just for this recipe! We usually have these on hand, so that’s what I used. The glaze alone is wonderful, or you could top the muffins with the glaze, and just a bit of sprinkling sugar on the top.
