There are a lot of people out there who absolutely adore brownies. So brownie lovers everywhere, this one’s for you! 

I am so excited to share my Diamond Brownie Bites with Cream Cheese Frosting with you all today!

Today we are talking about your favorite brownie made with just the right amount of chopped KitKat pieces, cut into a lovely diamond shape, topped with homemade cream cheese frosting, and finished off with a lovely little chunk (or more if you want) of KitKat to pull the whole thing together.

Start off by making a 13 x 9-inch pan of your favorite kind of brownies.

Whether you make homemade brownies, or brownies from a box is up to you. U guarantee you these brownies are going to be delicious either way!

This may look like a lot of chopped KitKats, but really it isn’t that much. I started with a 3.92 oz. package (8 Snack Size). I didn’t use the whole pack, and you probably won’t either.

If you have leftovers, keep the chopped up pieces in the fridge to top off ice cream, yogurt, or anything else your heart desires. :)

As you can see I like more of a minimalist look with the candy. Some of the chopped KitKats went in the brownies, some went on the brownies, and some went in the fridge to be used later.

The Cream Cheese Frosting on these bites is such a treat! If you don’t like, or don’t want to use Cream Cheese Frosting that’s fine too.

I just think the homemade Cream Cheese Frosting really adds something special to these brownies.

Keep in mind, you can always use canned Cream Cheese Frosting, or any other canned frosting if you prefer!

Diamond Brownie Bites with Cream Cheese Frosting

For the brownies:

1 recipe for a 13 x 9″ pan of your favorite fudge brownies, from a mix or homemade

Cream Cheese Frosting:

1/2 cup butter, softened

1 – 8 oz. package Neufchâtel, 1/3 less fat cream cheese, softened

2 cups confectioners’ sugar (powdered sugar)

1 teaspoon vanilla extract

Candy Garnish

1 – 3.92 oz. package KitKat Crisp Wafer, the 8 Snack Size with 8 – .49 oz. bars, chopped and divided

directions:

1. Prepare brownies as directed adding 1/2 of chopped Kit Kats to the brownie batter, pour into pan, bake as directed.

2. Allow brownies to cool completely. Once cooled, take a small diamond cookie cutter and cut as many diamonds as possible from pan. Number of diamonds will vary depending upon size of cookie cutter. My diamond cookie cutter is about 2.5 inches from top to bottom. Set aside.

3. Now for the frosting, with a stand mixer or electric mixer, beat together the butter and cream cheese until smooth and fluffy. Both must be softened in order to achieve desired consistency.

4. With the mixer on medium-low, add the sugar slowly until well incorporated. Add the vanilla and beat again until just combined.

5. Transfer frosting to a plastic resealable bag with one corner cut off at an angle and decorate brownie diamonds as desired, topping off each bite with chopped KitKat piece/pieces.

*You could also transfer frosting to a piping bag fit with a star tip and decorate brownie diamonds as desired.
