Chocolate Mint Ice Cream Sandwich Cake

With St. Patrick’s Day right around the corner, I have a mega simple frozen treat for you today that is fun, and delicious! 

I have been making ice cream sandwich cakes for the boys for as long as I can remember. I probably make about 25 different varieties and they love them all!

The nice thing about this version is you can leave off the St. Patrick’s Day sprinkles, and you have a great dessert for any night of the week, or even a special occasion.

If you are leery of mint don’t worry. The mint flavor in this dessert is refreshing without being too much.

I think you will find my Chocolate Mint Ice Cream Sandwich Cake is a wonderful balance of chocolate and mint.


My son (the ice cream lover) always likes to let his piece of cake warm up a bit so that it’s a little soft, and of course just a little melted.

He tells me all the time that’s the best way to eat any kind of ice cream, lol. :)


Chocolate Mint Ice Cream Sandwich Cake

My Chocolate Mint Ice Cream Sandwich Cake is great for St. Patrick’s day or any day of the year! 

Ingredients:                                                                                                   2014-03-14-017 CMISC

9 Mint Chocolate Chip Ice Cream Sandwiches (there are instructions for using 12 below)


Instant Chocolate Pudding Mix (3.9 ounces)

1 cup Thin Mint Coffee Mate*

1 carton (8 ounces) frozen whipped topping, thawed


Miniature chocolate chips, just a few to sprinkle in between the layers

6 Cool Mint Oreos, chopped for topping

St. Patrick’s Day Sprinkles for decorating, if desired


1. Whisk one packet of chocolate pudding with one cup of flavored creamer, or milk. Basically, half the milk called for on the package. Whisk until it begins to thicken. Fold in one container of Cool Whip, or any brand of thawed whipped topping.

2. Place three mint chocolate chip ice cream sandwiches on a plate. Spread desired amount of topping mixture on top of the three ice cream sandwiches. Sprinkle with 1-2 tablespoons of miniature chocolate chips. Repeat process to create two more layers of three sandwiches each, to total nine sandwiches.

3. When layers are completed and topped with pudding mixture sprinkle the top layer with chopped Cool Mint Oreos, and St. Patrick’s Day sprinkles, if desired.

4. Cover and freeze. Ice cream sandwich cake freezes very nicely. Remove from freezer 10 minutes before serving. Cut into pieces and serve.

*Nestle Thin Coffee Creamer is preferred for the best chocolate mint flavor. Chocolate milk, or regular white milk would be fine with 1/2 teaspoon of mint extract added.

*You can easily make this ice cream sandwich cake using 12 sandwiches if your prefer. When I use 12 sandwiches, I prefer to use three layers, four sandwiches in each layer. But it’s up to you on how you want to build your cake.
