This recipe is so good and so basic. Just the right amount of almond extract takes this double chocolate cookie to a whole new level!
These cookies are so easy and so yummy! Aside from minimal clean up, the nice thing about this cookie is the kids can help you make them. It always nice to have a simply baking project they can help out with.
I made a sort-of similar cookie about this time last year, but this year I wanted to change it up a bit.
There are lots of people out there that love almond and chocolate together, it is delicious!
So I have added some almond extract to this cookie. I must say I think it’s pretty darn good, as in really good!
Another possibility for a little extra flavor is a little bit of cherry or strawberry extract, depending on your preference. Of course, there’s always a third option and that is to add nothing more. You can simply omit the extract, and enjoy the double chocolate flavor!
Double Chocolate Almond Cookies
1 chocolate cake mix, or chocolate fudge cake mix
2 large eggs
1/3 cup vegetable oil
3 tablespoons instant chocolate pudding mix
1 teaspoon baking powder
1 teaspoon almond extract
3/4 cup miniature chocolate chips
Valentine’s Day sprinkles, optional
1. In a large bowl, mix the cake mix, eggs, oil, pudding mix, baking powder and almond extract with a large spoon until blended. Stir in chocolate chips.
2. Place the sprinkles in a small bowl. Shape dough into equal size balls, roll in sprinkles and place 2 inches apart on ungreased cookie sheets, or cookie sheets lined with baking mats.
3. Bake 10-12 minutes or until set around edges. Cool 5 minutes on sheets, then place on wire racks to cool completely.
