Chocolate Dipped Shortbread Bars

These shortbread bars are so tender and so good, and dipping them in chocolate just makes them even tastier!

Shhh, don’t tell anyone but I love shortbread! So each year when the holiday season comes around I make several different kinds. The buttery delicious flavor of shortbread is just one of those flavors that brings me straight back to being a kid.

If you haven’t made shortbread before, give it a try, you might just like it, no you will love it! There are just a few basic ingredients and the flavor is fantastic. It’s the butter! 🙂

So over the next few weeks, I’m going to show you a few of my favorite shortbreads and I think you guys are going to love them too!

These shortbread bars are dipped in milk chocolate, and they are absolutely wonderful! I used milk chocolate, but you don’t have to.

Use whatever kind of chocolate you enjoy. For you dark chocolate lover’s feel free to use dark chocolate; it would also be very good with these bars.

I strongly recommend using parchment paper to line your baking pan for these bars. Of course you can also use aluminum foil, but I definitely prefer parchment paper in this case. It just seems to make the entire process much easier!

Oh, one more thing, be sure, be sure to let the shortbread cool completely before moving it, or handling it.

Chocolate Dipped Shortbread Bars

Ingredients

1 cup soft butter

1/2 cup confectioners’ sugar

1 teaspoon vanilla

3 tablespoons packed brown sugar

2 cups all-purpose flour

1-1/2 cups milk chocolate chips

3 tablespoons heavy cream

Colored sprinkles, ground nuts, or favorite decoration for garnishing

Directions

1. Preheat oven to 350F degrees. Line a 9×9 inch baking pan with parchment paper sprayed with cooking spray.

2. Cream butter, confectioners’ sugar, and brown sugar in a large bowl, until light and fluffy. Add vanilla. Gradually add flour and mix well. Press dough to prepared baking pan.

3 Bake for 25-30 minutes, until baked through. Let cool for 30 minutes then remove bars from pan. Heat the chocolate chips with 3 tablespoons heavy cream in microwave until smooth and melted, stirring every 15 seconds. It should take about 45 seconds total. Dip one end of shortbread bars into chocolate; allow extra to drip off. Place on wire rack, decorate with sprinkles, nuts, or other garnish of choice, let stand until set.

Makes 16 bars
