Who doesn’t love a simple cookie? Today’s cookie features three types on chips, one easy dough, just the right amount of oatmeal, and you’re done. Bravo!
Triple-Chip Cookies are now one of my favorite types of cookies to make. It’s so easy to use different varieties of chips and end up with a new cookie. I always switch it up a bit!
On different days some things just seem to taste better. There so many types of chips out there these days, the sky is the limit. 🙂
It’s always the simple, well done, recipes that seem to make most people the happiest. This my friends, is one of those recipes.
So when I was at the store the other day I saw something NEW in the baking row. That always makes my day. Strange? I know. But it just kind of happens when bake and/or cook a lot.
In with all of the regular chocolate chips and such, they had packages of Mini Kisses made by Hershey’s. Honestly, I don’t know if these are new, or just new to my grocery store.
Because they were on sale with the in store coupon, I thought I would give them a try. Am I glad I did, because they’re great to work with. 🙂
Because the Mini Hershey’s Kisses are so cute, I like to put one on top, right in the center. Yes, there will some kisses in the dough, but the one of top just kind of adds a nice touch. Plus, it’s very inviting. 🙂
I always add oatmeal to my Triple-Chip Cookies. It gives the cookies a better texture and extra oatmeal is always a good thing.
So it’s like this, if your kids like oatmeal tell them these cookies are made with oatmeal and they will like the cookies even more.
IF your kids DON’T like oatmeal, don’t tell them there’s oatmeal in the cookies. Even the pickiest of eaters will have a hard time telling there’s oatmeal in these cookies.
Either way it’s a win-win situation. 🙂
Use this recipe as template, but feel free to change up the chips to whatever combination makes YOU and the people you bake for happy!
Mini Kiss Triple-Chip Cookies
1 (regular size) yellow cake mix
3 tablespoons Vanilla pudding mix
1 cup quick-cooking oats
1/2 cup vegetable oil
2 large eggs, room temperature
1/2 cup + 1 large handful Hershey’s Mini Kiss Chips
1/2 cup mini chocolate chips
1/3 cup white chocolate chips, or any type you prefer
1. Preheat oven to 350F degrees. Spray cookie sheets with cooking spray or line with parchment paper. Mix the cake mix, Vanilla pudding mix, quick-cooking oats, oil, and eggs in a large bowl by hand, or with an electric mixer. Mix in all of the chips by hand with a large spoon.
2. Using a cookie scoop drop scoops of cookie dough approximately 2 inches apart on prepared cookie sheets. Or drop the dough by tablespoonfuls, the same way if preferred.
3. Bake 10-13 minutes or until cookies are just set at the edges. Cool 5 minutes on cookie sheets, then gently remove cookies with spatula to a wire rack to cool completely.
MM Note: Really you’re looking at three different chips, about a 1/2 cup each for this cookie. I changed it just a bit for this cookie because I wanted to work in the white chips, and my guys aren’t real big on white chocolate. But with a few less white chips, and a few more Mini Kisses, the combo was great! You can change up the combo any way you want to. 🙂
