Strawberry-Banana Muffin Cake

Strawberry and banana together in an incredibly-moist muffin cake. Whether you’re a kid or an adult, this is simply a great way to start the day!

My Strawberry-Banana Muffin Cake is like a strawberry muffin with plenty of mashed banana added, healthy yogurt, and then as you would guess, made in a pan, just like a cake.

My boys went crazy over this muffin cake and even Sir Picky Pants (my youngest) truly enjoyed both the flavor and moisture of this one!

Shhh, don’t tell anyone but I start the recipe with a cake mix. No one will ever know, unless you tell them. 🙂

If you love bananas, you will love this muffin cake!

If you aren’t a true strawberry lover, but kind of, sort of, like strawberries and truly enjoy bananas you will love this muffin cake!

AND, if the only pieces of fruit you can stand are bananas, you will love this muffin cake!

This is a great breakfast for weekdays (make it the night before), and an even better one on the weekends.

Strawberry-Banana Muffin Cake

INGREDIENTS:                          mm 114

1 strawberry cake mix

1 egg, room temperature

1/2 cup milk, room temperature

1 (6 ounce) container of banana or banana cream pie yogurt, any brand

2 large, or 3 small bananas

Optional: 1/2 cup mini chocolate chips, or chopped nuts

GLAZE:

1 cup powdered sugar

1-3 tablespoons strawberry-banana juice, if you don’t have any available, milk will work just fine

Optional: 1 teaspoon vanilla extract

DIRECTIONS:

1. In a medium bowl, mash ripe bananas to desired consistency; set aside. In a large bowl, combine the cake mix, egg and milk, for about 1 minute. Mixture will be thick. Add bananas and yogurt, beat on medium speed for 1-2 minutes. Stir in mini chocolate chips or nuts if using.

2. Pour into a greased 13-in. x 9-in. pan. Bake at 350F degrees for amount time called for on box, usually about 35 minutes, or until a toothpick inserted near the center comes out clean. Place on wire rack to cool completely before glazing.

3. For glaze, in a small bowl, whisk together powdered sugar, juice or milk, and vanilla, if desired until a glaze consistency. Drizzle glaze over muffin cake. Allow glaze to dry a bit before serving. Allow about 15 minutes.
