Don’t let the title scare you, these Apple-Bacon-Cheese Mini Loaves are very moist and very delicious. They would be the perfect addition to any brunch! This is a fabulous quick bread for breakfast, brunch, served with a salad, or anytime at all. This would also be good with a bowl of soup in the Winter. Not only is the flavor excellent, but it’s always nice to have a good bread or two for brunch that isn’t oozing sweetness. Some people simply prefer savory over sweet, so it’s always nice to have a good go-to recipe when baking for those people. Think of this as a savory bread with a touch of sweetness. That’s exactly how it’s suppose to be. You have to try this one, it’s something different and delicious! I have wanted to play with a recipe that includes apples, bacon, and cheese for a long time. So I did. I kept reading how good these flavors are together, but I have to admit, I was hesitant. Then it dawned on me, bacon and cheese together just like on any good sandwich or burger, at least in my book, plus just a little apple for sweetness. What am I waiting for? For those of you that don’t use a lot of real apples in your cooking, apple and cheddar are great together, so are apple and bacon. So when you combine them all together it’s just HAS to be good! Oh, it was. Any kind of apple works well in these mini loaves. The fact of the matter is with only a 1/4 of a cup of apple there won’t be a significant difference in flavor no matter what kind of apple you use. Especially with the addition of bacon and cheese. It’s not too often I say that about apples, but it’s very true in this case! As for the cheese, we all know Cheddar Cheese and Apples go together very well!
Apple-Bacon-Cheese Mini Loaves
INGREDIENTS: 1 cup all-purpose flour 2 tablespoons sugar 1 teaspoon baking powder 1/4 teaspoon salt 1 egg, room temperature 1/2 cup milk, room temperature 2 tablespoons butter, melted 1 cup (4 ounces) shredded sharp cheddar cheese, Chipotle Cheddar would also be good if you like things spicy 1/3 cup crumbled cooked bacon (for me this was 7 pieces) 1/4 cup finely chopped apple DIRECTIONS: 1. In a medium bowl, whisk the egg, milk and melted butter; set aside. In a large bowl, combine the flour, sugar, baking powder and salt. Take the bowl with the wet ingredients and stir into the dry ingredients just until moistened. Fold in the cheese, bacon, and apple. 2. Transfer to two greased mini loaf pans (5-3/4-in. x 3-in. x 2-in.) loaf pans. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Makes: 2 MINI LOAVES (6 SLICES EACH). Adapted from: Taste of Home
