Buttercream frosting isn’t a favorite around here. Honestly, I spend the warm months trying to avoid it (at the Farmers’ Market), and my friends and family simply don’t really care much about it, one way or another.
After pondering it for a bit, I thought chocolate fudge and pumpkin cream cheese. That’s the ticket! Smooth, creamy, and the perfect Fall flavor, simply delicious! Of course, you can use any frosting you want to.
These cupcakes are fantastic even without frosting!
I could’ve done a recipe from scratch, but I chose to use a spice cake mix so that people who want to make an easy little something special during the middle of the week won’t be afraid to do so.
The pumpkin helps make the cupcakes moist, and the cream cheese takes it a step farther, along with the eggs. Mix these all together and you have nice moist cupcakes.
If your schedule simply doesn’t permit it, make them on the weekend. I don’t judge, I get it! I have kids too, and sometimes during the week there just aren’t enough hours!!
Note to self (and the entire world): You may decide to chop up the Kit Kats instead of just cutting them in half. If you haven’t had these yet, they’re the orange Snack Size Kit Kats in White Chocolate Flavored Candy for Halloween. They are SO good!

Pumpkin Cupcakes with Creamy Chocolate Frosting
1 spice cake mix
2 eggs, brought to room temperature
1 cup pumpkin
1/4 cup water, or apple juice
1 (8 ounce) container Limited Edition Pumpkin Spice Cream Cheese, divided
1 can (15.6 ounces) Chocolate Fudge Frosting
Snack Size Halloween Kit Kats in White Chocolate Flavored Candy, optional
Halloween sprinkles, optional
1. Preheat oven to 350F degrees. Spray two 12-count muffin pans with non-stick spray or line with cupcake liners. Set aside.
2. Mix cake mix, eggs, pumpkin, water (or apple juice) and half of Pumpkin Spice Cream Cheese together. Spoon or scoop the batter evenly into 18 cups; fill the unused cups one-third full with water. This will help your cupcakes bake better.
3. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. My cupcakes took exactly 18 minutes. Allow to cool completely before frosting.
4. For the frosting: Place remaining Pumpkin Spice Cream Cheese in a medium bowl; stir in Chocolate Fudge Frosting. Frost cooled cupcakes. If desired, garnish cupcakes with candy and/or sprinkles, or any other garnish you desire.
Makes 18 Cupcakes.
