Triple-Chocolate Krispie Jumbo Cupcakes

Rice Krispie treats get a fun and chocolatey twist with three different kinds of chocolate. These cupcakes are made from Rice Krispies (toasted rice cereal), no cake involved. Be warned – these are crazy good!

Most people really do love Rice Krispie treats! Yes, I know there are some people out there that simply aren’t fans. It happens, just like with anything else.

I promise you, most people will love these! 🙂

The trick with a triple chocolate treat like this is to create that fine balance between chocolatey enough to make it really special, yet balanced enough to make it not too heavy for the average person to eat.

I’ve taken the guess work out if it for you, so you can easily whip these together and be the Talk of the Table that night!

Mini M&M’s is my candy of choice for these krispie treats. Mini M&M’s have a flavor that most people like, they’re fun and colorful, and work well for so many things.

But you could certainly use a different M&M if you prefer, or even a different candy all together. I have done both in the past, and they have turned out great every single time!

These are a fantastic treat to serve to people of all ages. Adults love these just as much as kids do. Be prepared…these disappear fast!

Triple-Chocolate Krispie Jumbo Cupcakes 

INGREDIENTS

4 cups Rice Krispies, or any brand toasted rice cereal

3 cups Chocolate Rice Krispies, or any brand cocoa-flavored toasted rice cereal

1/4 cup butter

1 package (10 ounce) marshmallows

1/2 cup mini chocolate chips

2 (12 oz.) packages chocolate chips, or 2 (14 oz.) packages chocolate flavored candy melts – any flavor will do, dark chocolate, semi-sweet, or milk chocolate

1 (12 oz.) package mini Rainbow M&M’s

DIRECTIONS

1. Spray two jumbo muffin pans, or a 13″x9″ baking pan generously with cooking spray. Set aside.

2. In a large pot, melt 1/4 cup butter and 1 package (10 oz.) marshmallows over medium-low heat, stirring, until smooth. Stir in 1/2 cup mini chocolate chips until well blended, then 4 cups regular toasted-rice cereal and 3 cups chocolate flavored toasted rice cereal until combined. Press into jumbo cupcake pans, or a 13″x9″ baking pan; cool.

3. Melt 2 packages (14 oz. each) chocolate chips, or chocolate flavored candy melts according to package instructions. If using a 13″x9″ pan, remove treats from pan. Cut into bars. If making jumbo cupcakes carefully remove cupcakes from jumbo muffin pans.

4. Place treats on rack set over wax paper. Spread candy or melted chocolate chips over each bar to cover. Press on assorted candies. If desired drizzle with chocolate one more time. Let stand until set.

Makes 12-16 Servings.
