Autumn Applesauce Loaf with Cinnamon Glaze

This wonderful applesauce loaf is loaded with classic fall flavors. The delightful flavor of apple combined with a comforting spice loaf, then topped off with cinnamon glaze, makes this the perfect fall bread.

Last week I shared with all of you my Simply Delicious Fresh Apple Muffin recipe. This week I am sharing another great fall recipe. This recipe however, doesn’t have any pieces of fruit in it.

For those of you that want the vitamins and nutrients of fruit in their food (and who doesn’t?) with no fruit chunks, this apple recipe is for you!

Here you see the awesome cinnamon applesauce and fresh apple cider I used. You can make this delicious bread with any kind of applesauce you want. If you don’t have apple cider, you can use apple juice, water or a combo of the two. If you do have both in your fridge, even better.

Although I started with some fantastic cinnamon applesauce, you can use any kind of applesauce you want to. Keep in mind, the better the quality of applesauce, the better the recipe will be. I’m not talking expensive, simply good quality.

As far as the cider goes, there’s nothing like real apple cider! You can substitute apple juice here, or water if need be, however apple cider and apple juice are NOT the same thing. Quality apple cider is made from nothing but pressed apples.

Did someone say Cinnamon Glaze? This is where the Cinnamon Cream natural bliss coffee creamer comes in. The glaze for this recipe has only three ingredients – confectioners’ sugar, Cinnamon Cream Coffee Creamer, and vanilla. If your local store doesn’t carry this creamer, don’t sweat it, simply make a regular glaze like you normally would.

Ahh, the wonderful flavors of fall baked into one delicious loaf!

Autumn Applesauce Loaf with Cinnamon Glaze

INGREDIENTS

1 regular size spice cake mix, you could use yellow cake mix if you prefer

1 package (3.3 oz.) vanilla instant pudding mix

4 eggs, brought to room temperature

1 cup cinnamon applesauce or regular, if you prefer

1/2 cup real apple cider, or you could use apple juice, or even water

1/4 cup vegetable oil

1 tsp. ground cinnamon, add only if you use yellow cake mix, omit if you use spice cake mix

1/2 tsp. ground nutmeg

CINNAMON GLAZE

1 cup confectioners’ sugar

1-2 tablespoons Natural Bliss Cinnamon Cream Coffee Creamer or milk

1/2 teaspoon vanilla extract

DIRECTIONS

Preheat oven to 350F degrees. Spray four mini loaf pans, or two 8-in.x4-in. loaf pans with nonstick cooking spray. Set aside.

In a large bowl combine the cake mix, vanilla pudding mix, eggs, applesauce, cider, oil, and spices, if using. Blend with a mixer for 1 minute, scrape down the sides and blend for another 1-2 minutes.

Pour into four mini loaf pans, or two 8-in. x 4-in. loaf pans. Bake 30 to 40 minutes, or until toothpick insert near center comes out clean. Cool 10 minutes in pans on a wire rack, then remove loaves and cool completely.

After loaves have cooled completely, mix together glaze ingredients in a small bowl. For the glaze: Whisk the confectioners’ sugar and 1 tablespoon of creamer/milk together until smooth. Add more creamer/milk to thin until desired consistency is achieved. Drizzle over the loaves, allow glaze to dry, approximately 15 minutes. Serve and enjoy!

Makes 4 mini loaves = 20-24 Slices.
